Biscotti Cookies Recipe

These Italian cookies are great for a snack or breakfast with coffee. This recipe goes back to my mother’s mother. She gave them to us as kids before school and after.

Ingredients

1 C. nuts
1/2 C. margarine
1/4 C. honey
2 eggs
1 1/2 C. flour
2 tsp. baking powder

Directions

Heat oven to 350 degrees. Grind nuts. Beat margarine, honey and eggs together with mixer at medium speed. In a separate bowl, mix together flour, ground nuts and baking powder. Gradually add flour mixture to the creamed mixture. Beat at a slow speed until blended. Dough will be soft. Divide in half. On an oiled baking sheet, make 2 logs about 2-3 inches wide and about 12 inches long.

Chocolate Hazelnut Cookies Recipe

Giada calls these “biscotti” but in my mind they are cookies. If you like your cookies crunchy, then these are for you. Chocolatey, sweet and very airy! The original recipe used much more sugar, but I don’t think it needs it.

Ingredients

1 1/3 C. all-purpose flour
1/2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. kosher salt
1/2 C. butter, softened
1/2 C. chocolate hazelnut spread (recommended: Nutella)
1/4 C. sugar
1/4 C. brown sugar
1 egg
1 tsp. vanilla extract
3/4 C. chopped toasted hazelnuts

Directions

Preheat the oven to 375 degrees F.

In a medium bowl combine the flour, baking powder, baking soda, and salt. Set aside.

Ingredients

1 C. blanched almonds
3/4 C. granulated sugar
1/4 lb. butter
1/2 C. dark molasses
1/4 C. fresh, minced ginger
3 eggs
3 C. all-purpose flour
1/2 Tbs. baking powder
1 Tbs. ground cinnamon
1 tsp. ground nutmeg
1/2 tsp. ground cloves

Directions

Place the almonds in a baking pan and roast at 350 degrees for 10-15 minutes until golden. Allow the nuts to cool then chop and set aside. In a large bowl of an electric mixer, beat sugar, butter, molasses, and ginger until smooth. Add eggs, one at a time, beating after each addition. Using another bowl, stir together the flour, baking powder, cinnamon, nutmeg, cloves, and almonds. Add to wet mixture and stir to blend.

Cranberry Biscotti Recipe

Ingredients

2 1/3 C. all-purpose flour
1 C. granulated sugar
1 1/2 tsp. baking powder
1 1/4 tsp. cinnamon
1/2 tsp. nutmeg
2 large eggs
2 large egg whites
1 Tbs. vanilla extract
1 1/2 C. fresh or frozen cranberries, chopped
3/4 C. sliced almonds

Directions

Preheat oven to 325 degrees. Combine the flour, sugar, baking powder, cinnamon and nutmeg in a large mixing bowl. Whisk the eggs, egg whites and vanilla together and add to the dry ingredients, mixing until just moistened. Add cranberries and almonds and mix thoroughly. Turn out onto a floured surface and divide batter in half. Pat each half into a log about 14 inches long and 2 inches wide.

After my mom passed away I took her red cookie tin.She would make her favorite biscotti and we all knew where to find them.
