Persimmon Cookies Recipe

Persimmons are in interesting fruit not commonly found in the United States, although you can certainly find them at specialty grocery stores. They are sweet in flavor, much like a date or a plum, so they’re great for baking.

Ingredients

2 ripe persimmons, pureed
1 tsp. baking soda
2 C. all-purpose flour
1/2 tsp. ground cinnamon
1/2 tsp. ground cloves
1/2 tsp. ground nutmeg
1/2 tsp. salt
1 egg
1 C. white sugar
1/2 C. butter
1 C. raisins
1 C. chopped walnuts

Directions

Preheat oven to 350 degrees. Dissolve baking soda in persimmon pulp and set aside.

Cranberry Cookies Recipe

Ingredients

3 C. all-purpose flour
1 tsp. baking powder
1/4 tsp. salt
1/4 tsp. baking soda
1/2 C. butter, softened
2/3 C. brown sugar
2/3 C. granulated sugar
1 egg
2 Tbs. milk
1/4 C. orange juice
3 C. fresh cranberries, chopped
2/3 C. chopped walnuts

Directions

Combine flour, baking powder, salt and baking soda. Cream together butter and sugars. Add egg, milk, orange juice and mix well. Slowly add flour mixture and mix well. Stir in cranberries and walnuts. Drop teaspoonfuls onto a greased cookie sheet and bake for 10 - 15 minutes at 375 degrees.

Blueberry Cookies Recipe

This is a delicious non-chocolate recipe that are absolutely delicious.

Ingredients

2 C. flour
2 tsp. baking powder
1/2 tsp. salt
3/4 C. blueberries, fresh or frozen
1/2 C. shortening
1 C. sugar
1 1/2 tsp. lemon rind, grated
1 egg
1/4 C. milk

Directions

Combine 3/4 C. flour, baking powder and salt. Coat your blueberries with remaining 1/4 C. of flour (that will help prevent them from bleeding color into the dough). Stir in blueberries. Do not thaw if using frozen berries. Cream shortening until soft, gradually beat in sugar then lemon rind and egg. Add flour mixture alternately with milk, beating until smooth after each addition. Drop from teaspoon onto greased cookie sheet. Bake at 375 degrees for 10-12 minutes or until lightly browned.

Key Lime Cookies Recipe

These cookies are best made with real key limes, which are a little harder to find in your local grocery store but well worth the effort.

Ingredients

1/2 C. butter
1 C. granulated sugar
1 egg
1 egg yolk
1-1/2 C. flour
1 tsp baking powder
1/2 tsp salt
1/4 C. fresh lime juice
1-1/2 tsp. grated lime peel
1/2 C. confectioner’s (powdered) sugar

Directions

In a large bowl, mix butter, sugar, egg and egg yolk until creamy. Thoroughly mix in flour, baking powder, salt, lime juice and lime peel. Spray cookie sheet with nonstick vegetable coating. Form dough into 1/2-inch balls. Place on prepared cookie sheet. Bake at 350 degrees until lightly browned, 8 to 10 minutes. Remove to wire rack. While still warm, sift confectioners’ sugar over cookies.

Icebox Cookies Recipe

These were a tradition for the holidays in my house growing up. It was my grandmother’s recipe and both of my brothers would take a bag home to have later.

Ingredients

1 c brown sugar
1 C. butter or margarine
1 C. sugar
1 C. walnuts, chopped
1 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
1/2 C. dates, chopped(optional)
1/2 C. shortening
1/4 tsp. salt
3 eggs
4 1/2 C. Flour

Directions

Cream butter, shortening and sugars, add eggs and beat well. Stir in cinnamon, flour, salt, soda and powder. Stir in nuts and dates. Roll into logs on saran wrap or wax paper and freeze overnight. Preheat oven to 350 degrees, slice one log into 1/4-inch slices and place on baking sheet 2 inches apart. Bake for 10-12 minutes or until lightly golden brown.

Banana Pudding Sugar Cookies Recipe

Ingredients

2/3 C. shortening
2/3 C. granulated sugar
2 eggs
1 tsp. vanilla extract
1/2 tsp. baking powder
1/2 tsp. salt
1 small box instant banana pudding
2 1/2 C. all-purpose flour, divided

Directions

Cream the shortening and the sugar together until light and fluffy. Beat in the eggs one at a time. Stir in the vanilla extract, baking powder and salt. Add the dry instant banana pudding powder. Mix in 2 C. of the flour; add the remaining 1/2 C. only if needed. Cover dough and chill for at least 2 hours or overnight.

Orange Marmalade Cookies Recipe

1/2 tsp. salt

Frosting:
3 C. powdered sugar
1/2 C. butter or margarine (at room temperature)
1/4 C. Smucker’s Sweet Orange Marmalade orange juice (to thin frosting if necessary)

Pineapple Drop Cookies Recipe

Ingredients

1 C. firmly packed brown sugar
1/4 C. shortening
1/4 C. butter
1 egg
1 tsp. vanilla extract
3/4 C. crushed pineapple, drained well
2 C. sifted all purpose flour
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 C. chopped walnuts or pecans

Frosting:
1 C. confectioners’ sugar
3 Tbs. pineapple juice (approximately)

Directions

Cream together sugar and shortenings; add egg and vanilla and beat well. Add well-drained pineapple; stir in dry ingredients which have been sifted together. Add nuts. Drop by teaspoonful onto un-greased cookie sheet. Bake at 375 degrees for 12 minutes or until lightly browned.

Ingredients

1 tsp. baking soda
1 C. persimmon pulp
1 C. butter
1 C. granulated sugar
1 egg
2 C. all purpose flour
1/2 tsp. cloves
1/2 tsp. allspice
1/2 tsp. cinnamon
1 C. chopped nuts
1 C. raisins

Directions

Add soda to persimmon pulp and set aside. Cream butter and sugar together. Beat egg and add to pulp. Mix dry ingredients together; add raisins and nuts. Add egg mixture to butter and sugar; mix well. Add dry ingredients and blend. Drop by teaspoonful on greased cookie sheet. Bake for 12-15 minutes at 350 degrees.
