Ingredients
1 C. shortening
2 C. sugar
2 whole eggs, beaten
2 tsp. baking soda
4 tsp. baking powder
1 tsp. salt
1 tsp. cinnamon
1 tsp. nutmeg
1/3 tsp. ground cloves
2 C. persimmon pulp
1 tsp. lemon juice
1 tsp. vanilla
4 C. flour, divided
2 C. chopped nuts
1 C. mixed candied fruit
1 C. shredded coconut
Directions
Preheat oven to 375 degrees. Lightly grease baking sheet. Cream shortening and sugar until light and fluffy. Add eggs, blending thoroughly. Add baking soda, baking powder, salt, cinnamon, nutmeg, cloves, persimmon pulp, lemon juice and vanilla.

Cherries, coconut, peanuts and marshmallows melt together for this festive dish that’s great for Christmas or Valentine’s Day!

Ingredients
1 1/2 C. corn flake crumbs
1/2 C. margarine; softened
4 Tbs. sugar
1 1/3 C. flaked coconut
3/4 C. maraschino cherries, chopped
1 can Eagle Brand Condensed milk
1 C. pecans, chopped
2 C. miniature marshmallows
Directions
In 13×9x2 inch baking pan, combine cornflake crumbs, butter and sugar. Press down firmly with back of spoon. Sprinkle coconut, marshmallows, pecans and cherries evenly over crumb crust. Pour sweetened condensed milk over all evenly. Bake at 350 degrees for about 25 minutes. Cool completely before cutting into squares. Store in tin box between layers of wax paper.

Filled with raspberry jam, these cookies are pretty and yummy.

Ingredients
1/2 C. margarine
1/4 C. sugar
1/2 tsp vanilla
1 large egg separated
1 C. flour
1/4 tsp salt
1 1/4 C. finely chopped nuts
1/4 C. raspberry jam
Directions
Beat together margarine and sugar. Add vanilla and egg yolk. Add flour and salt and then refrigerate for at least an hour. Heat oven to 325 degrees. Shape dough into 1 inch balls. Beat egg white lightly and dip balls in egg white, and then into chopped nuts. Place balls 1 inch apart on a baking sheet. Press thumb into each ball to make an indentation. Bake until golden brown, about 15 minutes. Cool and fill with raspberry jam.

Ingredients
3/4 C. (1 1/2 sticks) unsalted butter, plus more for pan
1 1/2 C. all-purpose flour
1 1/2 C. rolled quick oats
1 C. light-brown sugar, firmly packed
1/2 tsp. baking soda
Date Paste, recipe follows
Directions
Heat oven to 350 degrees F. Butter an 8 by 8 by 2-inch pan, and set aside. In a large bowl, combine flour, oats, brown sugar, and baking soda. Add butter, and blend with fingertips until mixture resembles coarse crumbs. Transfer 2/3 of the dough into prepared pan, and press into bottom and up sides. Spread date paste over layer of the dough. Cover with remaining dough. Bake until golden brown, about 35 minutes. Cool completely in pan on a wire rack. Invert on to a plate, then back onto a cutting board. Cut into 2-inch squares. Store in an airtight container for up to 7 days.

Under Fruity Cookies
This simple cookie is sweet and sweeter with dates and maraschino cherries. Rice Krispies and pecans give them a fun crunch.

Ingredients
1/2 C. butter
1 1/2 C. chopped dates
1/3 C. chopped maraschino cherries
3/4 C. sugar
3 C. Rice Krispies
1 C. chopped pecans
Directions
Put butter, dates, cherries and sugar into a medium saucepan. Cook over medium heat, stirring constantly until mixture becomes a soft paste. Remove from heat. Add cereal and pecans. Mix well. Use a level Tbs. and make balls. Place on waxed paper to cool.

Ingredients
2 oz. baking chocolate squares, unsweetened
1 1/4 C. flour
1 tsp. baking powder
1 tsp. salt
1/2 C. shortening
1 tsp. vanilla extract
1 C. sugar
1 lg. egg
2 Tbs. milk
3/4 C. walnuts, coarsely chopped
1/2 C. chocolate chips
12 med. maraschino cherries, chopped and drained
Directions
Melt baking chocolate, set aside. Blend flour, baking powder, salt together; set aside.
Beat shortening, vanilla together; gradually add sugar, cream until fluffy. Then add egg, and beat. Mix in the cooled chocolate. Add dry ingredients and milk. Stir in remaining ingredients.
