Cinnamon Toffee Pecan Cookies Recipe

This is a really easy recipe but another favorite.

Ingredients

1 18 oz. Pillsbury refrigerated sugar cookie roll
2 tsp. cinnamon
1/2 tsp. nutmeg
2 tsp. vanilla
3/4 C. chopped pecans
1/2 C. toffee bits

Directions

Heat oven to 350 degrees. Spray cookie sheets with nonstick cooking spray. In a large bowl, break up cookie dough. Add cinnamon, nutmeg, and vanilla, and mix well. Add pecans and toffee bits; mix well. Drop dough by heaping teaspoonfuls 3 inches apart onto sprayed cookie sheets. Bake at 350 degrees for 11-14 minutes or until edges are golden brown. Cool 3 minutes; remove from cookie sheets.

Yield: 2 dozen cookies

Chocolate Nut Squares Recipe

This is a great recipe to have in your repertoire for emergency sweet situations. Plus, it doesn’t bake in the oven, so it’s a great one for kids to help out.

Ingredients

1 10 oz. bag or 2 6 oz. bags Riesen Chocolates, unwrapped
12 graham crackers
1/4 C. evaporated milk
1 C. coarsely chopped pecans, toasted

Directions

Cover bottom of a 15×10x1-inch sheet pan with graham crackers. Set aside. Microwave chocolate caramels and milk in a 1 quart microwave safe bowl. Microwave on high, stirring after one minute, until mixture is smooth, about 2 minutes. Pour and smooth over graham crackers. Sprinkle with nuts. Using apiece of waxed paper, gently press nuts into chocolate.

Honey Pecan Delight Recipe

A rich, pecan filling is sandwiched between two cookies and covered with chocolate ganache.

Ingredients

9 1/2 oz. brown sugar
4 1/2 oz. light corn syrup
4 1/2 oz. molasses
1/2 tsp. salt
1/2 tsp. vanilla extract
1 1/2 tsp. honey
6 eggs
3 1/2 oz. melted unsalted butter
15 oz. toasted pecan pieces
3 C. chocolate ganache (see recipe)
6 1/2 boxes All Abouts Girl Scout cookies

Directions

Combine sugar, corn syrup, molasses, salt, vanilla and honey. Beat eggs and add to the mixture. Add butter and pecans, mix thoroughly. Put mixture into a thick bottom pan and cook until mixture thickens and becomes spreadable. Cool in an ice bath. Once cool, place small amount of filling between 2 All Abouts Girl Scout Cookies. Melt chocolate ganache. Place Girl Scout All About Cookies on a wire rack and glaze with chocolate ganache.

Christmas Mocha Nut Butter Balls Recipe

Ingredients

1 C. butter; softened
1/2 C. sugar
2 tsp. vanilla
2 tsp. instant coffee powder
1/4 C. cocoa
1 3/4 C. flour
1/2 tsp. salt
2 C. pecans; finely chopped

Directions

Cream butter, sugar, and vanilla until light. Add instant coffee, cocoa, flour, and salt. Mix well. Add pecans. Shape into 1″ balls and place on ungreased sheets. Bake at 325 degrees for about 17-20 minutes. Roll in powdered sugar while warm. Store in tin box between layers of wax paper.

2 C. all purpose flour - sifted
2 C. walnuts - finely chopped
4 tsp. baking powder; sifted with the flour
1 C. egg substitute
1 C. sugar
2/3 C. brown sugar
1 Tbs. vanilla extract
Cinnamon and nutmeg to taste
3 Tbs. skim milk
Powdered sugar

Coconut Cashew Crunchers Recipe

Ingredients

1 C. packed brown sugar
1 C. granulated sugar
1 C. butter or margarine, softened
1 tsp vanilla
1 egg
2 1/2 C. all purpose flour
1 tsp baking soda
1/2 tsp salt
2 C. flaked coconut
1 1/2 C. chopped cashews

Directions

Heat oven to 350 degrees. Beat sugars, butter, vanilla, and egg in a large bowl with electric mixer on medium speed or mix with a wooden spoon. Mix until creamy. Stir in flour, baking soda, and salt. Stir in the coconut and the cashews. Drop dough by 1/4 C.fuls about 3 inches apart onto ungreased large cookie sheets. Flatten slightly. Bake 12-16 minutes or until the edges are golden brown. Cool for 2 minutes, then remove from cookie sheets to wire racks to cool completely.

Pecan Tassies Recipe

This recipes has been made for weddings and many parties. It took many tries before I got it just right. Most like it because it’s good and simple.

Ingredients

1/4 C. sugar
1/4 C. white corn syrup
1/2 tsp. vanilla
2 Tbs. butter
1 egg
pecan pieces
1 pkg. Pillsbury rolled pie crust

Directions

Melt your butter first in the microwave then add corn syrup, vanilla, sugar and the egg last, making sure it is cool so that your egg does not cook from the melted butter. Roll out pie crust thin, cut with a doughnut cookie cutter and place in small size muffin tin that has been sprayed with Pam. Put in pecan pieces (to your taste) and fill with butter mixture…DO NOT OVERFILL. Put in preheated oven at 375 degrees for 16 minutes.
