Zucchini Cookies Recipe

These cookies are a great way to use up any extra zucchini!

Ingredients

3/4 C. shortening
1 C. firmly packed brown sugar
1 lg. egg
1/2 C. grated zucchini - unpeeled
2 1/4 C. flour
1/2 tsp. baking soda
1/2 tsp. salt
3/4 tsp. ground cinnamon
1/4 tsp. ground cloves
1/4 C. raisins
1/4 C. nuts

Directions

In a large bowl, thoroughly mix all ingredients. Place rounded teaspoon of batter on greased cookie sheet. Bake at 375 degrees for 12-15 minutes, or until edges become golden brown.

Butter Pecan Cookies Recipe

These cookies are very moist and sweet – great if you like your cookies chewy.

Ingredients

1 C. butter, softened
2/3 C. packed brown sugar
1 egg
2 C. all-purpose flour
1/2 tsp. salt
1 1/2 C. pecan halves

Directions

In a large bowl, cream butter, brown sugar and egg. Mix until well blended. Slowly add flour and salt and mix well. Cover and refrigerate for at least one hour. Preheat oven to 375 degrees. Roll one inch pieces of dough into balls and place 2 inches apart on cookie sheets. Flatten balls with the bottom of a glass dipped in flour. Press a pecan into top of dough. Bake 10-12 minutes until lightly colored.

Walnut Cookies Recipe

Ingredients

2 C. all purpose flour - sifted
2 C. walnuts - finely chopped
4 tsp. baking powder; sifted with the flour
1-C. egg substitute
1-C. sugar
2/3-C. brown sugar
1-Tbs. vanilla extract
Cinnamon and nutmeg to taste
3 Tbs. skim milk
Powdered sugar

Directions

Pre-heat oven to 375 degrees. Mix egg substitute, vanilla and sugars in a large bowl. In another bowl, sift the flour, baking powder, cinnamon and nutmeg. Add to the wet ingredients slowly.  Stirring from the middle mix well, add a little milk if it gets too thick. Fold in the nuts. Drop teaspoonfuls onto no-stick cookie sheet and flatten out a little for larger cookies, leave rounded for nut shaped cookies. Put in the oven for 10 to 12 minutes until lightly browned. Watch them carefully so the bottoms do not burn. Sprinkle with powdered sugar if desired and allow cooling.

Fancy Oatmeal Cookies Recipe

I make these every year for Christmas. They are light, fluffy and easy to make!

Ingredients

1 C. butter
1/2 C. sugar
1 C. flour (sifted)
1 1/2 C. oatmeal
1/2 tsp. vanilla
Optional: mix in 1/2 C. nuts or raisins

Directions

Cream butter and sugar, until smooth. Add remaining ingredients. Chill. Shape into balls, flatten with bottom of glass dipped in sugar. Bake for 8-10 minutes in a 350-degree oven. Let cool. Sprinkle with lots of powdered sugar.

Orange Slice Cookies Recipe

Ingredients

1 18.25-oz. box yellow cake mix
3 eggs
6 Tbs. vegetable oil
1 C. chopped pecans
1 14-oz. bag orange slice candy chopped

Directions

Preheat oven 350 degrees. Mix cake mix, eggs, and oil. Mix well, when mixed add pecans and orange slices. Mix together, on a greased cookie sheet, drop by the teaspoonful 2 inches apart on sheet. Bake in hot oven for 10 minutes. Let cookies cool on wax paper before plating them.

Ingredients

2 C. flour
2 tsp. cinnamon
1 tsp. ground cardamom
1 tsp. baking soda
1 C. butter, softened
1/2 C. sugar
1/2 C. packed brown sugar
1 C. solid pack pumpkin
1 egg
2 tsp. vanilla
2 C. white chocolate chips
2/3 C. coarsely chopped macadamia nuts, toasted

Directions

Combine first 4 ingredients in a small bowl. Beat butter and sugars in a large bowl until creamy. Beat in pumpkin, egg and vanilla until well mixed; gradually beat in flour mixture. Stir in chips and nuts. Drop by rounded Tbs. onto greased baking sheet; flatten slightly with back of spoon or greased bottom of glass dipped in sugar. Bake in preheated oven at 350 degrees for 11-14 minutes. Cool for 2 minutes, remove to wire rack to cool completely.

Chocolate Chip Macadamia Cookies Recipe

Ingredients

1 pkg. white cake mix
1 C. all-purpose flour
1 C. quick-cooking oats
1/2 C. butter, melted
2 eggs
1 tsp. vanilla extract
1 1/2 C. coarsely chopped macadamia nuts
1 1/2 C. semi-sweet chocolate chunks or chips

Directions

In a large bowl, combine cake mix, flour, oats, melted butter, eggs, and vanilla. Beat on low speed for 1 minute or just until smooth. Stir in nuts and chocolate chunks. Drop dough by rounded tablespoonfuls onto prepared sheets. Bake 10-15 minutes or until light golden. Cool 1 minute on wire racks or until firm on baking sheets then remove to racks and cool completely.
