Tennesee Mud Cookies Recipe

My family ate these all the time growing up. This recipe was from my grandma.

Ingredients

1 stick margarine
2 C. sugar
3 Tbs. cocoa
1/2 C. milk
2 tsp. vanilla
1/2 C. peanut butter
3 C. oatmeal

Directions

Boil margarine, sugar, cocoa, and milk for 1 minute. Remove from heat and add 2 tsp. vanilla, and 1/2 C. peanut butter. Mix until smooth and add 3 C. oatmeal (uncooked). Mix and drop by teaspoonfuls on buttered wax paper. Let cool until hardened.

Peanut butter and sugar make these the perfect cookie to stick in a lunchbox or grab for an after school snack.

Ingredients

1/2 C. butter or margarine, softened
1/2 C. peanut butter
1/2 C. granulated sugar
1/2 C. firmly packed brown sugar
1 egg, well beaten
1 1/4 C. sifted all purpose flour
1/4 tsp. salt
3/4 tsp. baking soda
1/2 tsp. baking powder

Directions

Cream butter and peanut butter. Add sugars gradually and cream well; add egg. Sift flour, soda, salt and baking powder together and add to mixture. Chill dough well and form into small balls. Place on lightly greased cookie sheet and flatten with a fork, making a criss-cross pattern. Bake at 300 degrees for 10 minutes or until done.

Ingredients

2 C. sugar
1/2 C. milk
1/2 C. cocoa
1 stick (1/2 C.) butter
1/2 C. peanut butter
1 tsp. vanilla
3 C. oatmeal
1/2 C. coconut or pecans (optional)

Directions

Combine sugar, milk, cocoa, and butter in a saucepan. Bring to a boil. Remove from heat. Add peanut butter and beat until smooth. Add vanilla, oatmeal and coconut or pecans, and mix well. Drop on waxed paper and let cool.

Chewy Double Chocolate Peanut Butter Cookies Recipe

These are my husband and my son’s favorite cookies. They puff up in the oven and as they cool they flatten and get chewy.

Ingredients

1 1/4 C. softened butter
2 C. sugar
2 eggs
2 tsp. vanilla extract
2 C. self-rising flour
3/4 C. cocoa powder
1 C. peanut butter chips
1 C. semi-sweet chocolate chips
1 C finely chopped nuts (your choice)

Directions

Heat oven to 350 degrees. In bowl, cream butter and sugar until light and fluffy. Add eggs and vanilla and beat well. Sift together flour and cocoa, gradually add to the butter mixture and beat until well blended. Fold in nuts and both kinds of chips. Drop by rounded teaspoons onto ungreased baking sheet. Bake 8-9 minutes. Cool on cookie sheet until set about 3 minutes.

ChocoPeanut Butter Cookies Recipe

Easy…delicious…always a hit. I’m always asked for the recipe and I’m almost embarrassed when I explain how they are made. Two ingredients!

Ingredients

1 roll peanut butter refrigerator cookie dough
1 pkg. Reese’s mini peanut butter cups

Directions

Cut cookie dough into 30-36 pieces and roll each piece into a walnut-size ball. Drop each ball into the sections of mini-muffin pans. Bake according to package directions. Watch them closely; do not overbake. While cookies are baking remove mini-peanut butter cups from wrappers. As soon as the cookies come out of the oven, place a mini-peanut butter cup into each cookie and gently press down. Allow to cool completely before removing. This is very important. If you attempt to remove them too soon they will tear apart.

Fudge Cookies Recipe

No baking required. My sons still request this recipe (or have their wives request it!) They are easy, good, and satisfying for chocolate and peanut lovers.

Ingredients

1/2 C. milk
1 stick butter
1/3 C. cocoa
2 C. granulated sugar
1 tsp. vanilla
1/2 C. chunky peanut butter
3 C. oatmeal
1 C. coconut
1/2 C. dry roasted peanuts (if I have some around)

Directions

Put milk, butter,vanilla and cocoa in a saucepan. Cook over medium heat, until butter is melted and mixture comes to a boil. Boil for 2 minutes. Remove from heat. Quickly add peanut butter, oatmeal, coconut and peanuts. Mix together thoroughly. With teaspoon, portion out on waxed paper. Let cool and harden.

Magic Peanut Butter Cookies Recipe

Cookie dough wraps around a surprise peanut butter center in this “magic” cookie.

Ingredients

Cookie Dough:
1 1/2 C. flour
1/2 C. cocoa
1/2 tsp. baking soda
1/2 C. sugar
1/2 C. brown sugar
1/2 C. unsalted butter, softened
1/4 C. peanut butter
1 tsp. vanilla
1 egg

Filling:
3/4 C. peanut butter
3/4 C. powdered sugar

Directions

Preheat oven to 375 degrees. Combine filling ingredients and blend well. Form into 30 1-inch balls. Set aside. Beat sugars, butter and peanut butter until light and fluffy. Add rest of dough ingredients. With floured hands, take about 1 Tbs. of the dough and wrap it around the filling. Place 2 inches apart on un-greased cookie sheets. Flatten with the bottom of a glass. Bake for 7-9 minutes or until set and slightly cracked. Cool on wire racks.

Ritzy Chocolate Peanut Butter Cookies Recipe

I got this recipe from a friend many years ago. Great recipe when you need something in a hurry.

Ingredients

1 box Ritz crackers
1 pkg. almond bark
1 jar creamy peanut butter

Directions

Melt almond bark in double boiler or in the microwave. In the meantime make “sandwiches” with two crackers and a dab of peanut butter. When almond bark is melted remove from heat. Using tongs to dunk each cracker sandwich in the almond bark to coat completely. Lay on wax paper to set.

20-30  minutes

8 Tbs. (1 stick) Blue Bonnet® spread
1 C. LIBBY’S® 100% Pure Pumpkin
2 egg whites or 1 egg
1 tsp. grated orange peel
2 C. Quaker® Oats, quick or old fashioned, uncooked
1 C. all-purpose flour
1 tsp. pumpkin pie spice or ground cinnamon
1/2 tsp. baking soda
1/2 tsp. salt
1/2 C. finely chopped, pitted prunes
1/4 C. finely chopped walnuts

Glaze:
1/2 C. powdered sugar
1 Tbs. orange juice

No-Bake Luscious Cookies Recipe

These are Rice Krispie treats taken to the next level, tasty, delicious and easy to do.  Make it with the kids.

Ingredients

1/2 C. white sugar
1/2 C. white syrup
1 C. chunk style peanut butter
3 C. Rice Krispies

Directions

In a heavy skillet, heat the sugar, syrup, and peanut butter. Stir and heat until mixture is well blended, almost to a boil. Then stir in Rice Krispies. Stir until Krispies are well coated. Drop by teaspoonfuls on wax paper. They harden quickly. These are tasty.
