Cinnamon Toffee Pecan Cookies Recipe

This is a really easy recipe but another favorite.

Ingredients

1 18 oz. Pillsbury refrigerated sugar cookie roll
2 tsp. cinnamon
1/2 tsp. nutmeg
2 tsp. vanilla
3/4 C. chopped pecans
1/2 C. toffee bits

Directions

Heat oven to 350 degrees. Spray cookie sheets with nonstick cooking spray. In a large bowl, break up cookie dough. Add cinnamon, nutmeg, and vanilla, and mix well. Add pecans and toffee bits; mix well. Drop dough by heaping teaspoonfuls 3 inches apart onto sprayed cookie sheets. Bake at 350 degrees for 11-14 minutes or until edges are golden brown. Cool 3 minutes; remove from cookie sheets.

Yield: 2 dozen cookies

2 1/4 C. plus 2 tbsp. flour
1/2 tsp. baking powder
1/2 tsp. cloves, cinnamon
1/4 tsp. nutmeg
1 C. ground almonds
2 Tbs. chopped candied orange peel
2 Tbs. chopped candied lemon peel
2 eggs
1/2 C. sugar
1 C. honey
1/2 C. milk

Almond glaze:
1 C. icing sugar
1/2 tsp. almond essence
1 tsp. lemon juice
2 Tbs. cold water

Gingerbread Biscotti Recipe

A favorite holiday flavor mixed with a classic Italian dessert makes this the perfect cookie for dipping into your eggnog or hot chocolate.

Ingredients

1 C. blanched almonds
3/4 C. granulated sugar
1/4 lb. butter
1/2 C. dark molasses
1/4 C. fresh, minced ginger
3 eggs
3 C. all-purpose flour
1/2 Tbs. baking powder
1 Tbs. ground cinnamon
1 tsp. ground nutmeg
1/2 tsp. ground cloves

Directions

Place the almonds in a baking pan and roast at 350 degrees for 10-15 minutes until golden. Allow the nuts to cool then chop and set aside. In a large bowl of an electric mixer, beat sugar, butter, molasses, and ginger until smooth. Add eggs, one at a time, beating after each addition. Using another bowl, stir together the flour, baking powder, cinnamon, nutmeg, cloves, and almonds. Add to wet mixture and stir to blend.

Double Chocolate Anise Cookies Recipe

Ingredients

2 C. flour
1 C. cocoa
1 tsp. cinnamon
1 tsp. baking soda
1/2 tsp. salt
1 1/4 C.(2 1/2 sticks) butter, softened
2 C. sugar
2 eggs
1 1/2 tsp. anise extract
1 tsp. vanilla extract
1 1/2 C. semi sweet chocolate morsels
1 1/2 C. chopped walnuts

Directions

Preheat oven to 350 degrees. Mix together flour, cocoa, cinnamon, baking soda and salt. In a separate mixing bowl, beat butter and sugar until fluffy. Add eggs, anise and vanilla; beat well. Gradually add flour mixture, beating well. Stir in morsels and walnuts. Drop by rounded teaspoonfuls onto ungreased cookie sheets. Bake 8-10 minutes. Do not over bake. Cool on cookie sheets 5 minutes. Remove to wire rack. Cool completely.

Grandma’s Molasses Cookies Recipe

Dark, soft and delicious! I remember my mom going North to bring grandma back to our house just to make a lot of these cookies. Watching grandma make them, I always wondered how she knew when to stop putting in the flour, she NEVER measured anything when she made these cookies. I was always in awe of her ! I can’t believe I have never seen this recipe anywhere. It’s really good. Every bite reminds me of her. I hope you enjoy it as much as we do.

1 C. sour milk
1 C. shortening
1 tsp. soda in milk
1 C. molasses
1 tsp. cinnamon
2 Tbs. vanilla
dash of salt (1/2 tsp.)
enough flour to form soft dough

Ginger Snaps Recipe

This is a yummy recipe handed down by my maternal grandmother. She was an excellent grandmother in that she did not just make them for the holidays!

Ingredients

2 C. plain flour
2 tsp. soda
1 tsp. cinnamon
3/4 C. Crisco or substitute
l egg
1 Tbs. ginger
1/2 tsp. salt
1 C. sugar
1/4 C. molasses

Directions

Cream sugar and Crisco. Add molasses and egg; beat in dry ingredients. Roll into small 1-inch balls, dip in sugar and place on ungreased cookie sheet. Bake at 375 degrees until tops are cracked and lightly browned. *Do not press down with a glass!
