Ginger Cream Cookies Recipe

Ingredients

5 1/2 C. Flour
1 C. Sugar
1 C. Real Butter
3 Eggs
1 Tbs. Soda
1 C. Molasses
3 Tsp. Cinnamon
1 1/2 tsp. Cloves
1 tsp. Nutmeg
1 C. Sour Cream

Icing:
Powdered Sugar
Milk

Directions

Mix all ingredients and let set over night. Roll into a soft dough. Roll out and make cookies. Set oven at 375 degrees and bake for 8-10 minutes.

Icing: Mix together ingredients to make icing, not runny.

Spice Cookies Recipe

Using a spice cake mix and apple sauce make this quick, easy and healthy.

Ingredients

1 Spice cake mix (2 layer)
1 C. unsweetened applesauce
1 egg
1 C. quick oats
1 C. raisins (optional)

Directions

Mix ingredients together until all ingredients are moistened. Drop by rounded tsp. onto a sprayed cookie sheet. Bake at 350 degrees. Remove from oven when lightly browned.

Ginger Shortbread Cookies Recipe

Ingredients

1/2 C. confectioners’ sugar
2 C. all-purpose flour
1 tsp. ground ginger
1 C. cold butter, sliced
1/2 C. chopped candied ginger

Directions

Combine the sugar, flour and ground ginger. Cut in butter with a pastry blender or fork. Finish mixing with your hands to make sure all the butter is worked in. When mixture holds together work in the candied ginger. Press the shortbread into an ungreased 9-inch square pan, about 1/2-inch thick. Prick through to bottom of the dough with a fork. Bake at 300 degrees for 50-60 minutes. While warm, cut into desired shapes with a sharp serrated knife.

1 C. cut up dates
5 Tbs. sour cream
4 C. flour
1 tsp. baking soda

1/4 tsp. salt
1/2 tsp. nutmeg
1 tsp. cloves
2 tsp. vanilla

Frosting:
1 3/4 C. powdered sugar
1/8 tsp. salt
3 Tbs. strong coffee, cold
3 Tbs. butter
1 tsp. vanilla

Gingerbread Cookies with Chocolate Recipe

Ingredients

1/2 C. butter or margarine
1/2 C. molasses
2 1 oz. squares unsweetened chocolate
2 1/2 C. all-purpose flour
2/3 C. white sugar
1 tsp. baking powder
1/2 tsp. baking soda
1 tsp. ground ginger
1/4 tsp. salt
1/4 C. milk
White sugar

Directions

Combine butter or margarine, molasses, and unsweetened chocolate in the top of a double boiler. Heat until chocolate melts. Stir until smooth. Sift together flour, 2/3 C. sugar, baking powder, baking soda, ginger, and salt. Stir in melted chocolate mixture and milk. Mix well. Chill until firm. Roll dough into 1-inch balls. Roll balls in sugar. Place on an ungreased cookie sheet. Bake at 375 degrees for about 10 minutes.

A fun way to get into the holiday season: let the kids help with the cookie cutter and then decorate! Also make edible tree ornaments!

Ingredients

1 5.9 oz. pkg. butterscotch pudding mix
3/4 C. butter
3/4 C. firmly packed brown sugar
1 egg
2 1/4 C. all-purpose flour
1 tsp. baking soda
1 Tbs. ground ginger
1 1/2 tsp. ground cinnamon

Directions

Cream pudding mix with butter and sugar; add egg, and blend well. Combine flour, baking soda, ginger, and cinnamon; blend into pudding mixture. Chill dough for 1 hour or until firm. Roll dough on a floured board to about 1/4 inch thickness and cut with cookie cutter. Place on greased baking sheets; use a straw to make a hole in the top of the cookie for hanging on the tree, if desired. Bake at 350 degrees for 10-12 minutes. Remove from oven and cool on wire rack. Decorate if desired.

Ingredients

1 C. molasses
1 C. (2 sticks) butter
1/4 C. hot water
2 tsp. baking soda
1 C. sugar
4 C. flour
2 tsp. salt
1-1/2 tsp. ginger
1/2 tsp. cloves
1/2 tsp. allspice
2 tsp. cinnamon

Directions

Bring molasses to a boil; remove from stove and melt butter in it. Add baking soda to hot water. In a large bowl, measure in sugar and pour molasses over top. Pour baking soda/water over top - it will froth over. Mix well.
