Under Spice and Gingerbread Cookies+ Sugar Cookies
This is a classic favorite dusted with cinnamon-sugar that no child can resist.

Ingredients
1 C. butter or margarine softened
1 1/2 C. sugar
2 eggs
1 tsp. baking soda
2 3/4 C. all purpose flour
1/4 tsp. salt
2 tsp. cream of tarter
1/2 C. sugar with 2 tsp. cinnamon stirred in

Under Sugar Cookies
Simple and easy! Make the dough ahead of time and pop them in the oven whenever.

Ingredients
1 C. butter or margarine
3/4 C. firmly packed light brown sugar
3/4 C. granulated sugar
2 eggs
2 Tbs. milk
2 tsp. vanilla extract
4 C. all purpose flour
2 1/2 tsp. baking powder
1 tsp. salt
Directions
Combine butter and sugars, beat until fluffy. Add eggs, milk and vanilla; beat well. Combine flour, baking powder and salt; stir into batter. Cover and chill 3-4 hours. Roll out about 1/3 of the dough to 1/8th thickness on lightly floured board. Cut into desired shapes. Bake at 375 degrees on ungreased cookie sheet for 8-10 minutes or until done. Cool, decorate. I use the decorator frosting in the tubes, spread it out and then dip into colored sugar sprinkles.

These cookies have a delicious combination of orange, pecans and chocolate!

Ingredients
1/2 lb.( 2 sticks) butter, softened
1 C. sugar
2 tsp. orange extract
1 tsp. vanilla extract
1 egg
2 C. flour
1 tsp. baking powder
1 C. chopped pecans
1 sm. bag semisweet chocolate morsels
Directions
Cream butter and sugar. Add orange and vanilla extract; mix well. Add egg; mix well. In separate bowl, mix together flour and baking powder. Gradually add flour mixture; mix well. Stir in chopped pecans. Drop by rounded teaspoonfuls on ungreased cookie sheets. Bake for 10-12 minutes in a preheated 350-degree oven. Cool for about 10-12 minutes. Pour semisweet chocolate morsels into a microwavable bowl. Microwave for 1 minute and stir halfway through. Dip tops of cookies in the melted chocolate. Cool completely.

I’ll give you my recipe. It’s delicious, crisp and they melt-in-your-mouth! This is a large recipe, as it makes 10 dozen. These freeze well and the 10 dozen won’t last long!

Ingredients
5 1/4 C. flour
1 tsp. Cream of Tartar
1 tsp. baking soda
1 C. butter
1 C. granulated sugar
1 C. powdered sugar
2 beaten eggs
1 C. oil
2 tsp. vanilla extract
Directions
Mix together the flour, cream of tartar and baking soda. Cream the butter and sugars together. Add the eggs and beat until fluffy. Add the oil and vanilla. Beat, then beat in the flour mixture. Chill overnight. Roll in balls. Flatten with a glass dipped in sugar. Bake at 350 degrees for 10 minutes.

These are great for the holidays and kids love to make them with you. The best part for them is to sprinkle the decorator sugar on.

Ingredients
1 C. butter
1/2 C. powdered sugar
1/2 C. sugar
1 egg
1-2 tsp. vanilla
2 1/4 C. all purpose flour
1/2 tsp. cream of tartar
1/2 tsp. baking soda
Decorating sugar, if desired
Directions
Heat oven to 375 degrees. Combine butter, powdered sugar and 1/2 C. sugar in large bowl. Beat at medium speed, scraping bowl often, until creamy. Add egg and vanilla; continue baking until well mixed. Reduce speed to low; add flour, cream of tartar and baking soda. Beat until dough forms a ball. Shape dough into 1-inch balls. Place 2 inches apart onto ungreased cookie sheets.

Under Sugar Cookies

This is my shortcut for baking the best sugar cookies you ever tasted. This recipe originally came to me from a friend of my mother’s who cut it out of a newspaper more than 50 years ago. Older versions of Betty Crocker’s cookbook also had this recipe, but I don’t think the newer versions have it.

1 1/2 C. powdered sugar
1 C. butter (no substitutes), softened
1 egg
1 tsp. vanilla
1/2 tsp. almond extract
2 1/2 C. all-purpose flour (not self-rising)
1 tsp. baking soda
1 tsp. cream of tartar
Desired food coloring
