<p>1/2 C. butter, softened<br />
3/4 C. white sugar<br />
3 eggs<br />
2 tsp. almond extract<br />
3 C. all-purpose flour<br />
2 tsp. baking powder<br />
1/2 C. chopped candied cherries<br />
1/2 C. mini semi-sweet chocolate chips<br />
1/2 C. chopped white chocolate</p>
<h3>Directions</h3>
<p>Preheat oven to 350 degrees F (175 degrees C). Grease a large cookie sheet. In a large bowl, cream together the butter and sugar until smooth. Beat in the eggs one at a time, then stir in the almond extract. Combine the flour and baking powder; stir into the creamed mixture until just blended. Mix in candied cherries and mini chocolate chips. With lightly floured hands, shape dough into two 10 inch long loaves. Place rolls 5 inches apart on the prepared cookie sheet; flatten each to 3 inch width. Bake for 20 to 25 minutes, or until set and light golden brown. Cool 10 minutes. Using a serrated knife, cut loaves diagonally into 1/2 inch slices. Arrange slices cut side down on ungreased cookie sheets. Bake for 8 to 10 minutes, or until bottoms begin to brown. Turn, and bake an additional 5 minutes, or until browned and crisp. Cool completely. Melt white chocolate in the microwave, stirring every 20 to 30 seconds until smooth. Drizzle cookies with melted white chocolate. Store in tightly covered container.</p>

<p>Mix 1 C. flour with nuts, candied fruit and coconut. Add remaining flour to persimmon mixture, blending thoroughly. Add nut mixture, blending thoroughly. Add nut mixture. Mix well. Drop by teaspoonfuls onto prepared sheet. Bake for 15 minutes or until golden brown.</p>

2 1/2 C. powdered sugar<br />
1 C. chunky peanut butter<br />
1 C. graham cracker crumbs<br />
12 oz milk chocolate (chocolate chips or bar)</p>
<h3>Directions</h3>
<p>Line a 9&#215;13&#8243; pan with parchment or wax paper. Mix 2 sticks of butter, powdered sugar, peanut butter, and graham cracker crumbs. Spread mixture on the bottom of the pan. Melt chocolate (see note) and spread over mixture in pan. Let set in a cool place. Remove from pan and cut into desired shapes.</p>
<p>Note: You can melt the chocolate either in the microwave or in a double boiler:</p>
<p>In a Microwave Oven: Place coarsely chopped chocolate in a microwave-safe container and microwave at medium (50 percent power) for 1 1/2-4 minutes, until the chocolate turns shiny. Remove the container from the microwave and stir the chocolate until completely melted. Stir milk and white chocolates after about 1 1/2 minutes. Because of their milk proteins, they need to be stirred sooner than dark chocolate. (If overheated, these chocolates may become grainy.)</p>
<p>In a Double Boiler: Place coarsely chopped chocolate in the top of a double boiler over hot, not simmering, water. Melt the chocolate, stirring until smooth. Remove the top part of the double boiler from the bottom</p>

<p>Cream together the butter and sugar. Add the eggs one at a time, mixing well after each. Mix all dry ingredients together and add them to the egg mixture 1/3 at a time, mixing well after each addition. Cookie dough will be soft and sticky. Refrigerate the dough for at least 1 hour. Shape the dough into small balls (the size of a large marble) and roll them in cinnamon sugar. Place them on a parchment paper lined cookie sheet about 2 inches apart and flatten them slightly. Cookies will spread out as they bake. Bake at 400 degrees for 10-12 minutes or until lightly browned around the edges, but still soft. Remove from cookie sheet immediately as the cookies will stick if allowed to cool on cookie sheet.</p>

Bake at 350 degrees for 10-12 minutes.</p>

Then, pour caramel mixture over the top. Place the rest of the dough on top in pieces. Bake for 20 minutes more. Cook and place in refrigerator to set caramel.</p>
