Mom’s Anise Biscotti Recipe

Most of us have a special memory or a trinket or two that make us think of our mother’s love.I have a red cookie tin. After my mom passed away I took her red cookie tin.She would make her favorite biscotti and we all knew where to find them. Now my family always look for that red tin,they cried Biscotti,just like Grandma used to make.

Ingredients

1 C. oil
2 C. sugar
6 eggs
1 Tbs. anise extract
4 tsp. baking powder
6 C. all-purpose flour
1/2 C. hazelnuts,finely ground

Directions

Preheat oven to 350 degrees. In bowl, combine oil, sugar, eggs and extract. In separate bowl combine baking powder, flour and hazelnuts. Gradually add flour mixture to oil with hands. Mix with floured hands until pliable. Divide dough into four pieces.

On lightly floured surface roll each piece into a 12×2-inch log. Arrange logs about 6 inches apart on 2 baking sheets. Bake 20-25 minutes or until logs are golden brown. Transfer logs to work surface and let cool 5 minutes,With serrated knife slice each log diagonally into 1/2-inch thick slices. Arrange cookies slices upright and slightly apart. Bake until crisp (about 20-30 minutes). Transfer to a wire rack and cool completely.
