No-Bake Fruitcake Cookies Recipe

My mom made these when I was a small child and I still make them for Christmas today! These fruit cake cookies can be shaped into rolls and frozen or made in 2 loaf pans and frozen. It must be kept frozen until served. They are much better than a cooked fruitcake with the candied fruit!

Ingredients
1 lb. graham crackers
1 lb. miniatures marshmallows
1 lb. chopped dates
1 lb. pecans
1 3 1/2-oz. can coconut
1 10-oz. jar maraschino cherries, drained with juice reserved
1/2 pt. whipping cream
Directions
Crush graham crackers until very fine. Cut dates, pecans and cherries into small pieces. Combine these, coconut and marshmallows and add to crumbs. In a separate bowl mix cherry juice and whipping cream and add to other mixture. Mix well and form into two rolls. Wrap in foil. (May be packed into two foil-lined loaf pans instead of rolls). Freeze and keep frozen until served. Slice and serve with coffee or other favorite drink.
