Persimmon Cookies Recipe

Persimmons are small, sweet fruits that have a dense pulp. They are a refreshing ingredient to these spiced cookies.

Ingredients

1 tsp. baking soda
1 C. persimmon pulp
1 C. butter
1 C. granulated sugar
1 egg
2 C. all purpose flour
1/2 tsp. cloves
1/2 tsp. allspice
1/2 tsp. cinnamon
1 C. chopped nuts
1 C. raisins

Directions

Add soda to persimmon pulp and set aside. Cream butter and sugar together. Beat egg and add to pulp. Mix dry ingredients together; add raisins and nuts. Add egg mixture to butter and sugar; mix well. Add dry ingredients and blend. Drop by teaspoonful on greased cookie sheet. Bake for 12-15 minutes at 350 degrees.

Yield: 4-5 dozen cookies
