Graham Cracker Bar Cookies Recipe

This no-bake dessert is super-easy to throw together and a great way to get the kids involved in the kitchen!

Ingredients

1 16 oz. box graham crackers
1 C. granulated sugar
1/2 C. milk
1/2 C. margarine or butter
1 egg
1 C. coconut
1 C. graham cracker crumbs
1 tsp. vanilla extract

Frosting:
2 C. confectioners’ sugar
3 Tbs. milk
1 tsp. vanilla extract
1/4 C. butter

Directions

Cover bottom of 15×10x1-inch jelly roll pan with whole graham crackers. Combine sugar, milk, butter and egg in saucepan and heat just to boiling over medium heat, stirring constantly. Remove from heat and stir in coconut, graham cracker crumbs and vanilla. Mix thoroughly and spread over crackers in pan. Cover with another layer of whole graham crackers. Frost. Cool and cut into squares. Store in refrigerator.

Ingredients

2 pkg. graham crackers
1 bag coconut
1 bag chocolate chips
1 can condensed milk
1 stick butter

Directions

Melt butter in a 13 x 9 cake pan. Crush graham crackers fine and press into butter. Spread coconut on crackers. Spread chips on coconut. Pour milk over top and bake at 350 degrees until golden brown on top

Ingredients

Crust:
1/2 C. (1 stick) salted butter, softened
1/4 C. confectioners’ sugar
1 tsp. vanilla extract
1 C. flour

Cream Cheese Filling:
8 oz. cream cheese, softened
1 1/2 C. confectioners’ sugar
1 large egg
1 tsp. lemon extract

Lemon Curd:
4 large egg yolks
1 Tbs. cornstarch
3/4 C. granulated sugar
3/4 C. water
2 medium lemons, grated, for 2 tsp. lemon peel,
and squeezed for 1/4 C. fresh lemon juice
2 Tbs. salted butter, softened

Topping:
2 Tbs. confectioners sugar

Chocolate Toffee Bars Recipe

Ingredients

1/2 C. butter or margarine
1 C. packed brown sugar
2 slightly beaten eggs
2 tsp. vanilla
1-1/2 C. all-purpose flour
1-1/2 tsp. baking powder
1/4 tsp. salt
1 C. semisweet chocolate pieces (6 oz.)
Powdered sugar (optional)

Directions

In a medium saucepan melt butter or margarine and brown sugar; cool to lukewarm. Stir in eggs and vanilla. Sprinkle flour, baking powder, and salt over butter mixture. Stir just until mixture is smooth. Stir in all but 2 Tbs. of the chocolate pieces; transfer to a greased 11×7x1-1/2-inch baking pan. Sprinkle with reserved chocolate pieces. Bake in a 350 degree F oven for 25 to 30 minutes or until a toothpick inserted near center comes out clean. Cool in pan on a wire rack. If desired, sprinkle with powdered sugar. Cut into bars. (To tote, cover pan with plastic wrap.)

Chocolate Chip Pecan Bars Recipe

Ingredients

1 pkg. (2 layer) yellow cake mix
1/4 C. butter or margarine; melted
1/4 C. firmly packed brown sugar
1/4 C. water
2 large eggs
1 1/2 C. semi-sweet chocolate chips
1/2 C. chopped pecans or walnuts

Drizzle:
1/2 c. semi-sweet chocolate chips
2 tsp. shortening

Directions

Preheat oven to 375. Grease and flour a 13×9 inch pan. For cookie bars, combine cake mix, melted butter, brown sugar, water eggs, 1 1/2 c. chocolate chips and pecans in a large bowl. Mix with spoon until thoroughly blended. Spread in pan. Bake at 375 for 20 to 25 minutes or until lightly golden brown. For drizzle, combine 1/2 C. chocolate chips and shortening in a small micro-wave safe bowl. Microwave on high power for 30 seconds. Stir. Repeat until chocolate is melted. Drizzle over cooled bars. Allow chocolate to set before cutting into bars.
Makes approx. 20 bars

Ingredients

1 C. raisins
1/2 C. water
1/4 C. margarine
1 tsp. cinnamon
1 C. flour
1 egg, slightly beaten,
3/4 C. unsweetened applesauce
1 Tbs. sugar substitute
1 tsp. baking soda
1/4 tsp. vanilla extract

Directions

In a saucepan over medium heat, cook the first five ingredients until margarine melts. Continue cooking for 3 minutes. Add all remaining ingredients. Spread into an 8-inch square greased baking dish. Bake at 350 degrees for 25 to 30 minutes or until lightly browned.

Light and Luscious Orange Bars Recipe

A creamy orange gelatin mixture is spread on a graham cracker crust for a heavenly dessert great for diabetics.

Ingredients

1 tsp. unflavored gelatin
1/4 C. frozen concentrated orange juice
2 Tbs. sugar
1/2 tsp. vanilla
1/2 C. nonfat dry milk powder
1/2 C. cold water
1 Tbs. lemon juice
24 graham crackers

Directions

Chill a small mixing bowl and beaters. In the top section of a double boiler, soften gelatin in the melted concentrated orange juice. Place over hot water, and stir until the gelatin is completely dissolved. Remove from heat and stir in the sugar and vanilla. Using cold beaters, beat dry milk and water until soft peaks form. Add the lemon juice and beat until stiff. Fold in orange juice mixture. Spread on 12 graham crackers. Top with the remaining crackers. Wrap individually; freeze until firm about 2 hours.

Ingredients

1/2 C. butter or margarine, softened
1 egg
1 pouch (1 lb. 1.5 oz.) Betty Crocker® chocolate chip cookie mix
1 C. semisweet chocolate chips (6 oz)
1 container (1 lb.) Betty Crocker® Rich & Creamy chocolate frosting
1 can (6.4 oz.) Betty Crocker® Easy Flow pink decorating icing
35 yogurt-covered miniature pretzels

Directions

Heat oven to 350 degrees. Spray bottom of 13×9-inch pan with cooking spray. In medium bowl, stir together softened butter and egg. Stir in cookie mix until soft dough forms. Press mixture in bottom of pan, using floured fingers. Bake 19 to 21 minutes or until golden brown. Cool 30 minutes. In medium microwavable bowl, microwave chocolate chips on High 1 to 2 minutes, stirring every 30 seconds, until melted. Stir in frosting. Spread evenly over bars. Cool completely, about 30 minutes.
