Best Greek Cookies Recipe

These traditional Greek cookies are really called Koulourakia! Dip them in your coffee in the morning.

Ingredients

* 1 C. corn oil
* 1 C. chopped pecans
* 3 Tbs. baking powder
* 6 C. flour
* 6 eggs
* 2 C. sugar
* 1 cordial glass whiskey
* granulated sugar
* cinnamon

Directions

Beat corn oil and sugar together for about 20 minutes. Add eggs and continue beating. Add nuts. Sift flour and baking powder together, then add to corn oil, sugar and egg mixture. Add whiskey.

Lemon Squares Recipe

These tart cookies are filled with an interesting combination of egg, sugar, baking powder, lemon juice and flour.

Ingredients

* 1/2 C. margarine
* 1/4 C. sifted powdered sugar
* 1 C. flour
* Filling:
* 2 eggs, beaten
* 1 C. sugar
* 1/2 tsp. baking powder
* 3 Tbs. lemon juice
* 2 Tbs. flour

Directions

Mix as for pie crust (into little pea balls) and press into a 9×9-inch pan. Bake at 325 degrees for 25 minutes. Pour filling over crust. Bake at 350 degrees for 20 minutes. Sprinkle powdered sugar after it has cooled off.

Ingredients

* 2 C. flour
* 1 tsp. baking soda
* 1/2 tsp. salt
* 1 C. white sugar
* 1 egg
* 1/2 C. raisins (optional)
* 1 tsp. baking powder
* 1 tsp. cinnamon
* 1 C. shortening
* 1 C. pumpkin
* 1 tsp. vanilla
* 1/2 C. nuts, chopped (optional)

Directions

Preheat oven to 350 degrees. Sift flour, baking soda, baking powder, cinnamon and salt. Cream sugar and shortening. Add pumpkin and egg to creamed shortening. Add dry ingredients, nuts and raisins. Drop by teaspoonfuls on greased cookie sheet. Bake 10-12 minutes in oven.

* 1 1/2 C. sifted flour
* 1/2 tsp. soda
* 1 tsp. salt
* 1/2 C. shortening
* 3/4 C. sugar
* 1 egg
* 1/2 tsp. vanilla extract
* 1 C. candied fruit, finely chopped

Directions

Preheat oven to 375 degrees. Sift together flour, soda and salt. Cream together shortening and sugar until light and fluffy. Add egg and vanilla extract. Beat well. Blend candied fruit with flour mixture and add to creamed mixture. Mix well. Drop by teaspoonfuls on ungreased baking sheet. Bake in oven for 10 minutes.

Ingredients

* 1 1/2 C. butter
* 1 C. sugar
* 1 egg, well-beaten
* 2 tsp. vanilla extract
* 4 C. flour
* 1 tsp. baking powder

Directions

Preheat oven to 400 degrees. Thoroughly cream butter and sugar. Add egg and vanilla. Beat well. Add sifted, dry ingredients. Mix to smooth dough. Force through cookie press, forming various shapes. Decorate with candied fruits or colored sugar. Bake in oven until light brown, about 8-10 minutes.

Ingredients

* 1 C. butter
* 1 tsp. vanilla
* 1/4 tsp. salt
* 1/2 C. confectioners sugar
* 2 1/4 C. flour
* 3/4 C. chopped nuts

Directions

Cream butter. Add sugar. Mix well. Add vanilla, flour and salt. Mix well. Fold in chopped nuts. Chill dough for several hours. Preheat oven to 400 degrees. Pinch small piece of dough and roll into 1-inch ball. Place on ungreased baking sheet. Bake until set, but not brown, in oven for 10-12 minutes. While still warm, roll in powder sugar.

Ingredients

* parchment paper
* 1/2 C. flour
* 1/4 tsp. baking soda
* 1/4 tsp. salt
* 1/4 tsp. ground cinnamon
* 1/2 C. packed brown sugar
* 1 egg
* 1/2 tsp. vanilla extract
* 11/2 C. quick oats, uncooked
* 1/2 C. Decas GrapeCrans or BluCrans

Directions

Preheat oven to 375 degrees. Line cookie sheet with parchment paper. Combine flour, baking soda, salt and cinnamon and set aside. Cream butter and brown sugar together in a large bowl, with a electric mixer for 2-3 minutes or until light and fluffy. Beat in egg and vanilla. Gradually add flour mixture and beat until well blended. Stir in oats and Decas berries. Drop by rounded teaspoon onto parchment lined cookie sheet. Bake for 10-12 minutes or until golden brown. Put on wire rack to cool.

Lime Icebox Cookies Recipe

The dough for these cookies keeps in the freezer for up to 1 month, so you can make the cookies at your leisure whenever you need them.

Ingredients

3 limes
1/2 C. butter or margarine, softened
3/4 C. granulated sugar
1 egg
1 3/4 C. all-purpose flour
About 1/2 C. powdered sugar

Directions

Grate 1 tsp. peel and squeeze 3 Tbs. juice from limes. In medium bowl, with mixer at medium speed, beat butter and granulated sugar until creamy. Reduce speed to low; beat in egg and lime peel and juice until blended. Beat in flour until combined. Divide dough in half. On separate sheets of wax paper, shape each half into a 6×2 1/2×1 1/2-inch brick. Wrap each brick in wax paper and freeze 3 hours, or up to 1 month.
