Based on the flavors of a popular Provencal ice cream, these honey-lavender biscotti are best made with an assertive honey, such as a spicy clover.

2 1/4 C. unbleached all-purpose flour
1 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
2/3 C. sugar
3 large eggs
3 Tbs. honey
1/2 tsp. vanilla extract
2 Tbs. minced zest from
1 orange
1 Tbs. dried lavender blossoms (optional)

Cranberry-Orange Biscotti Recipe

These treats can also be made with dried finely chopped apricots, raisins or once dried cherries. They all work out.

1/2 C. sugar
1/2 C. firmly packed brown sugar
1/4 C. margarine or butter — softened
2 tsp. grated orange peel
3 eggs
3 C. all purpose flour
3 tsp. baking powder
3/4 C. sweetened dried cranberries — chopped
1/4 C. chopped almonds

Glaze:
1 C. powdered sugar
1/2 tsp. grated orange peel
4 tsp. skim milk
