Ingredients
1 C. shortening
2 C. sugar
2 whole eggs, beaten
2 tsp. baking soda
4 tsp. baking powder
1 tsp. salt
1 tsp. cinnamon
1 tsp. nutmeg
1/3 tsp. ground cloves
2 C. persimmon pulp
1 tsp. lemon juice
1 tsp. vanilla
4 C. flour, divided
2 C. chopped nuts
1 C. mixed candied fruit
1 C. shredded coconut
Directions
Preheat oven to 375 degrees. Lightly grease baking sheet. Cream shortening and sugar until light and fluffy. Add eggs, blending thoroughly. Add baking soda, baking powder, salt, cinnamon, nutmeg, cloves, persimmon pulp, lemon juice and vanilla.

Under Distinctly Christmas Cookies+ Fruity Cookies
Cherries, coconut, peanuts and marshmallows melt together for this festive dish that’s great for Christmas or Valentine’s Day!

Ingredients
1 1/2 C. corn flake crumbs
1/2 C. margarine; softened
4 Tbs. sugar
1 1/3 C. flaked coconut
3/4 C. maraschino cherries, chopped
1 can Eagle Brand Condensed milk
1 C. pecans, chopped
2 C. miniature marshmallows
Directions
In 13×9x2 inch baking pan, combine cornflake crumbs, butter and sugar. Press down firmly with back of spoon. Sprinkle coconut, marshmallows, pecans and cherries evenly over crumb crust. Pour sweetened condensed milk over all evenly. Bake at 350 degrees for about 25 minutes. Cool completely before cutting into squares. Store in tin box between layers of wax paper.

Ingredients
2/3 C. butter, softened
3/4 C. powdered sugar
3 Tbs. cocoa powder
1 Tbs. milk or water
1/2 tsp. vanilla
2 C. oatmeal
1/2-3/4 C. powdered sugar for coating
Directions
Blend butter and sugar. Blend cocoa, water and vanilla. Add cocoa mixture to butter mixture and blend thoroughly. Add oatmeal and blend with hands. Form into ball, 3/4 inch in diameter. Chill mixture as necessary to make shaping easier. Place additional powdered sugar in bowl. Drop balls into sugar. Roll to coat. Place on plate; refrigerate until firm, about one hour.
Yield: 36 balls

Under Nutty Cookies+ Spice and Gingerbread Cookies
This is a really easy recipe but another favorite.

Ingredients
1 18 oz. Pillsbury refrigerated sugar cookie roll
2 tsp. cinnamon
1/2 tsp. nutmeg
2 tsp. vanilla
3/4 C. chopped pecans
1/2 C. toffee bits
Directions
Heat oven to 350 degrees. Spray cookie sheets with nonstick cooking spray. In a large bowl, break up cookie dough. Add cinnamon, nutmeg, and vanilla, and mix well. Add pecans and toffee bits; mix well. Drop dough by heaping teaspoonfuls 3 inches apart onto sprayed cookie sheets. Bake at 350 degrees for 11-14 minutes or until edges are golden brown. Cool 3 minutes; remove from cookie sheets.
Yield: 2 dozen cookies

Under Peanut Butter Cookies

Ingredients
1 C. quick oats (can use regular too, it just affects texture and taste a bit)
1 C. powdered milk
1 C. peanut butter
1/2 C. honey
Directions
Mix oats and powdered milk together first. Add peanut butter and honey. Will almost form a “ball”. Separate and roll into balls (what ever size you want). I usually get 2.5 dozen or more (depending on who is rolling). If “dough” seems sticky add a little more oats. Also very good if “rolled” in mini chocolate chips.

Ingredients
2 sticks (1 C.) margarine, melted
2 1/2 C. powdered sugar
1 C. chunky peanut butter
1 C. graham cracker crumbs
12 oz milk chocolate (chocolate chips or bar)
Directions
Line a 9×13″ pan with parchment or wax paper. Mix 2 sticks of butter, powdered sugar, peanut butter, and graham cracker crumbs. Spread mixture on the bottom of the pan. Melt chocolate (see note) and spread over mixture in pan. Let set in a cool place. Remove from pan and cut into desired shapes.
Note: You can melt the chocolate either in the microwave or in a double boiler:

Ingredients
3/4 C. chopped dates
1/2 C. finely chopped peeled apple
1/2 C. raisins
1/2 C. water
1 C. plus 1 Tbs. all-purpose flour
1 tsp. ground cinnamon
1 tsp. baking soda
1/2 tsp. salt (optional)
2 eggs
1 tsp. liquid sweetener
Directions
In a large saucepan, combine dates, apples, raisins and water. Bring to a boil; reduce heat and simmer for 3 minutes. Remove from heat; cool. Combine flour, cinnamon, baking soda, and salt, if desired. Stir into apple mixture and mix well. Combine eggs and sweetener; add to batter. Drop by tablespoonfuls onto a nonstick baking sheet. Bake at 350 degrees for 10-12 minutes.

Ingredients
1 pkg. Kraft caramels
1 small can Carnation milk
1 box German chocolate cake mix
3/4 C. margarine, melted
1 C. chopped nuts (or more is desired)
1 pkg. chocolate chips.
Directions
Preheat oven to 350 degrees. Unwrap caramels and place in double boiler and melt with 1/4 can of Carnation milk; set aside. Mix cake with melted margarine, rest of Carnation milk, and nuts. Place half of this dough in the bottom of a 13×9x2 glass pan and bake for 7 minutes. Remove from the oven and sprinkle chocolate chips evenly on top of the cooked dough. Then, pour caramel mixture over the top. Place the rest of the dough on top in pieces. Bake for 20 minutes more. Cook and place in refrigerator to set caramel.
