Persimmon Cookies Recipe

This persimmon cookies recipes adds raisins for a extra bit of sweet texture.

Ingredients

1 C. persimmon pulp
1 C. nuts
1 C. raisins
1 C. sugar
1/2 C. shortening
1 tsp. soda, dissolved in pulp
1/4 C. flour
1/2 tsp. cinnamon
1/2 tsp. ground cloves
1/2 tsp. nutmeg
1 egg

Directions

Cream shortening and sugar. Add egg, soda and persimmon pulp. Add dry ingredients, nuts and raisins. Drop with teaspoon on greased cookie sheet. Bake for 10 minutes in 350-375 degrees oven.

Yield: 90 cookies

Fruit Cake Cookies Recipe

This is a very good cookie, not cheap to make but worth the time and effort!

Ingredients

1 lb. crystallized pineapple
1 lb. red and green candied cherries
1 lb. dates pitted
1 lb. golden raisins
6 C. nuts chopped
1/4 lb. butter or oleo
1 1/2 C. brown sugar
4 lg eggs
3 1/2 C. sifted all-purpose flour
3 tsp. baking soda
1/2 tsp. allspice
1/2 tsp. nutmeg
1/2 tsp. ground cloves
1 C. whiskey (bourbon)

Directions

Mix 1/2 C. flour with fruit and nuts. Mix rest of flour and spices. Cream butter and sugar, add spiced flour and eggs and mix well. Add fruit and nut mixture. Add whiskey.

Ingredients

2 C. flour
2 tsp. cinnamon
1 tsp. ground cardamom
1 tsp. baking soda
1 C. butter, softened
1/2 C. sugar
1/2 C. packed brown sugar
1 C. solid pack pumpkin
1 egg
2 tsp. vanilla
2 C. white chocolate chips
2/3 C. coarsely chopped macadamia nuts, toasted

Directions

Combine first 4 ingredients in a small bowl. Beat butter and sugars in a large bowl until creamy. Beat in pumpkin, egg and vanilla until well mixed; gradually beat in flour mixture. Stir in chips and nuts. Drop by rounded Tbs. onto greased baking sheet; flatten slightly with back of spoon or greased bottom of glass dipped in sugar. Bake in preheated oven at 350 degrees for 11-14 minutes. Cool for 2 minutes, remove to wire rack to cool completely.

The recipe is from New York City pastry chef Michael Morehouse, who named the cookies for the aunt who passed the recipe on to him.

Cookie Dough Brownies Recipe

Ingredients

Cookie Layer:
1 pkg. brownie mix
1/2 C. chocolate chips

Filling:
1/2 C. margarine, softened
1/2 C. brown sugar
1/4 C. sugar
2 Tbs. milk
1 tsp. vanilla
1 C. flour

Topping:
1 C. chocolate chips
1 Tbs. oil

Directions

Prepare brownie mix according to package directions and add 1/2 C. chocolate chips to batter. Pour into a 9×13 pan and cook according to package instructions. When done, let cool on a cooling rack. Beat margarine and both sugars in a mixing bowl until creamy. Add milk, vanilla and flour and mix thoroughly. Set aside.

Cheesecake Cookies Recipe

Ingredients

1/3 C. butter
1/3 C. brown sugar
1 C. flour
1/2 C. walnuts, finely chopped
1/4 C. sugar
8 oz. pkg. cream cheese
1 egg
2 Tbs. milk
1 Tbs. lemon juice
1/2 tsp. vanilla extract

Directions

Cream butter with brown sugar in a small mixing bowl. Add flour and walnuts; blend together. Mixture will be crumbly. Reserve 1 C. for topping. Press remainder of mixture into the bottom of an 8x 8″ baking pan. Bake at 350 degrees for 12-15 minutes or until lightly browned. Blend sugar with cream cheese until smooth. Add egg, milk, lemon juice and vanilla; beat well. Spread over baked crust and sprinkle with reserved topping. Bake for 15 minutes. Cool. Cut into 2″ squares.
