Celestial Oatmeal Cookies Recipe

This is a fab cookie. It does make a lot, but you need them all because they go quickly!

Ingredients
1 C. granulated sugar
8 Tbs. (1 stick) Blue Bonnet® spread
1 C. LIBBY’S® 100% Pure Pumpkin
2 egg whites or 1 egg
1 tsp. grated orange peel
2 C. Quaker® Oats, quick or old fashioned, uncooked
1 C. all-purpose flour
1 tsp. pumpkin pie spice or ground cinnamon
1/2 tsp. baking soda
1/2 tsp. salt
1/2 C. finely chopped, pitted prunes
1/4 C. finely chopped walnuts
Glaze:
1/2 C. powdered sugar
1 Tbs. orange juice
