Lenten Chocolate Chip Cookies Recipe

It can be difficult to avoid all dairy products the 40 days before Easter, but these Lenten chocolate chip cookies can still be eaten!

Ingredients

* 1 C. dairy-free margarine
* 3/4 C. sugar
* 3.4 C. brown sugar
* 3/4 tsp. salt
* 1 tsp. vanilla
* 1 C. non-dairy chocolate chips
* 3 C. flour
* Fake egg:
* 2 tsp. baking powder
* 1 tsp. baking soda
* 4 Tbs. flour
* 6 Tbs. water

Directions

Make the fake egg. Then combine all ingredients, except chips. Stir in chips. Drop teaspoonfuls onto greased cookie sheet and bake until cookies are golden brown.

3-Ingredient Peanut Butter Cookies Recipe

These peanut butter cookies are golden brown, soft and chewy.

Ingredients

* 1 C. creamy or chunky peanut butter
* 1 C. granulated sugar
* 1 lg. egg

Directions

Preheat oven to 375 degrees. Mix all ingredients well. Drop by teaspoon on greased cookie sheet or by tablespoon for larger cookie. Bake until golden around edges. If desired, you can add 1/2 C. of chocolate chips or desired candy when mixing. You can also drizzle with melted chocolate chips after baking.

Toffee Crunch Cookies Recipe

These crunchy toffee cookies don’t contain egg! Just a whole bunch of other yummy ingredients!

Ingredients

* 15 graham crackers
* 1/2 C. almond slices or chopped nuts
* 3/4 C. butter or margarine
* 3/4 C. packed brown sugar
* 1/4 tsp. almond extract
* 1 C. chocolate chips

Directions

Arrange crackers in bottom of well-buttered 9×13-inch pan. Sprinkle with nuts. Combine butter and brown sugar in saucepan. Boil hard for 3 minutes. Stir in extract. Pour carefully over crackers. Bake at 375 degrees for 10 minutes or until bubbly all over. Sprinkle with chips. When soft, spread to frost. Cut into small squares while warm or refrigerate and break into pieces when hard.

Pecan Meringues Recipe

These simple meringues are a delightful way to end a meal.

Ingredients

* 2 egg whites
* 2/3 C. sugar
* 2 C. chopped pecans
* 1/4 tsp. salt
* 1 tsp. vanilla

Directions

Preheat oven to 250 degrees. Beat egg whites and salt until stif and forms peaks. Add sugar gradually, beating constantly. Beat until sugar is dissolved and meringue is glossy. Fold in nuts and vanilla. Reserve some nut halves to put on top of cookies. Spoon rounded teaspoonfuls onto waxed or brown paper lined cookie sheets. Top with extra nut halves. Bake in oven until cookies are pale ivory in color, 25-30 minutes. Remove from paper and pan at once, carefully. Cool on rack. May be stored in air-tight container.

Graham-Crumb Cookies Recipe

* 1 6-oz. pkg. semi-sweet chocolate chips
* 4 C. graham cracker crumbs
* powdered sugar

Directions

Mix milk chocolate chips and graham cracker crumbs and pat in greased 10×15x1-inch cookie sheet. Bake at 350 degrees for 30 minutes. Cut in squares and sprinkle with powdered sugar.

Ingredients

* 1 lb. sweet milk chocolate
* 2 1-oz. squares unsweetened chocolate
* 5 C. corn flakes
* 1 C. chopped pecan meats
* 1 C. chopped dates
* 1/4 tsp. salt

Directions

Melt both chocolate over hot water. Combine nut meats, dates, salt and corn flakes. Add to chocolate and stir carefully until well mixed. Drop from teaspoon onto waxed paper. Chill until firm, about 1 hour.

* 1 1/2 C. sifted flour
* 1/2 tsp. soda
* 1 tsp. salt
* 1/2 C. shortening
* 3/4 C. sugar
* 1 egg
* 1/2 tsp. vanilla extract
* 1 C. candied fruit, finely chopped

Directions

Preheat oven to 375 degrees. Sift together flour, soda and salt. Cream together shortening and sugar until light and fluffy. Add egg and vanilla extract. Beat well. Blend candied fruit with flour mixture and add to creamed mixture. Mix well. Drop by teaspoonfuls on ungreased baking sheet. Bake in oven for 10 minutes.

Coconut Macaroons Recipe

* 2 C. coconut, shredded
* 1/2 C. sweetened, condensed milk
* 1 tsp. vanilla extract

Directions

Preheat oven to 350 degrees. Combine coconut and milk. Add vanilla and mix well. Drop from teaspoon, 1 inch apart, onto greased cookie sheet. Bake in oven for 10 minutes or until delicately browned. Remove from sheet at once.

Cherry’s Bird’s Nest Cookies Recipe

Ingredients

* 1 1/2 lbs. butter or margarine
* 6 egg yolks
* 6 egg whites
* 16 dozen whole glace cherries
* 12 oz. brown sugar
* 1 1/2 lbs. flour
* 1 1/2 lbs. chopped pecans

Directions

Preheat oven to 350 degrees. Cream butter and sugar. Beat in egg yolks. Mix in flour. Form dough into 1-inch balls. Beat egg whites slightly. Dip balls in egg white, then in chopped pecans. Place on baking sheets. Flatten slightly. Bake in oven for 8 minutes. Remove from oven. Press small depression in center. Bake 10 minutes longer. Loosen cookies from pan while still warm. Place a whole glace cherry in center of each.

Not many people have tried a Swedish dessert. Maybe they think they’d be difficult. This one is easy!

Ingredients

* 1 1/2 C. butter
* 1 C. sugar
* 1 egg, well-beaten
* 2 tsp. vanilla extract
* 4 C. flour
* 1 tsp. baking powder

Directions

Preheat oven to 400 degrees. Thoroughly cream butter and sugar. Add egg and vanilla. Beat well. Add sifted, dry ingredients. Mix to smooth dough. Force through cookie press, forming various shapes. Decorate with candied fruits or colored sugar. Bake in oven until light brown, about 8-10 minutes.
