Chocolate Delights Recipe

This is truly a chocolate lover’s delight. This dessert is so satisfying!

Ingredients

* 1 lb. sweet milk chocolate
* 2 1-oz. squares unsweetened chocolate
* 5 C. corn flakes
* 1 C. chopped pecan meats
* 1 C. chopped dates
* 1/4 tsp. salt

Directions

Melt both chocolate over hot water. Combine nut meats, dates, salt and corn flakes. Add to chocolate and stir carefully until well mixed. Drop from teaspoon onto waxed paper. Chill until firm, about 1 hour.

Tropic Surprises Recipe

It’s the apricots and nuts that makes these yummy cookies tropical.

Ingredients

* 2 C. flour, sifted
* 1/3 C. sugar
* 1/2 tsp. baking powder
* 1/4 tsp. soda
* 1/4 tsp. salt
* 1/2 C. butter
* 1 egg, unbeaten
* 1-2 Tbs. milk
* 1/2 tsp. vanilla
* apricot preserves
* ground nuts
* powdered sugar

Directions

Mix all ingredients, except apricot and nuts, with low speed mixer. Divide dough into 3 parts. Roll out one part, spread with apricot preserves and ground nuts. Roll. Do likewise to the other two parts of dough. Bake in oven for 15-17 minutes. Cool and slice. Sprinkle with powdered sugar.

Christmas Fruit Drops Recipe

These fruity Christmas cookies are different than what Santa is used to, but I bet he’ll love them all the same.

Ingredients

* 1 1/2 C. sifted flour
* 1/2 tsp. soda
* 1 tsp. salt
* 1/2 C. shortening
* 3/4 C. sugar
* 1 egg
* 1/2 tsp. vanilla extract
* 1 C. candied fruit, finely chopped

Directions

Preheat oven to 375 degrees. Sift together flour, soda and salt. Cream together shortening and sugar until light and fluffy. Add egg and vanilla extract. Beat well. Blend candied fruit with flour mixture and add to creamed mixture. Mix well. Drop by teaspoonfuls on ungreased baking sheet. Bake in oven for 10 minutes.

Fig Nut Squares Recipe

Instead of fig pudding for Christmas, bake some of these fig nut squares. They’re sweeter and the kids will like them more.

Ingredients

* 2 eggs
* 1/2 tsp. vanilla
* 1/2 tsp. baking powder
* 1/2 tsp. salt
* 1 C. chopped nuts
* 1/2 C. sugar
* 1/2 C. flour
* 1 1/2 C. finely cut-up, dried figs

Directions

Preheat oven to 350 degrees. Beat eggs until foamy. Beat in sugar and vanilla. Blend dry ingredients, mix into egg mixture. Add figs and nuts. Spread in greased 9×9-inch square pan. Bake 25-30 minutes.

Pineapple Cookies Recipe

This is a fun way to use pineapple in a dessert. These cookies are sweet, moist and way different than anything you’ve ever had.

Ingredients

* 1 C. shortening
* 1 egg
* 3 1/2 C. flour
* 1 tsp. soda
* 1/4 tsp. nutmeg
* 1 1/2 C. sugar
* 1 9-oz. can crushed pineapple
* 1 C. pineapple juice
* 1/2 tsp. salt
* 1/2 C. nuts

Directions

Mix shortening thoroughly, with sugar and egg. Stir in the pineapple. Sift together and stir in flour, soda, salt and nutmeg. Mix in the chopped nuts. Chill 1 hour. Preheat oven to 400 degrees. Drop rounded teaspoon about 2-inch each, apart on greased sheet. Bake until set in oven for 8-10 minutes.

Cherry’s Bird’s Nest Cookies Recipe

Ingredients

* 1 1/2 lbs. butter or margarine
* 6 egg yolks
* 6 egg whites
* 16 dozen whole glace cherries
* 12 oz. brown sugar
* 1 1/2 lbs. flour
* 1 1/2 lbs. chopped pecans

Directions

Preheat oven to 350 degrees. Cream butter and sugar. Beat in egg yolks. Mix in flour. Form dough into 1-inch balls. Beat egg whites slightly. Dip balls in egg white, then in chopped pecans. Place on baking sheets. Flatten slightly. Bake in oven for 8 minutes. Remove from oven. Press small depression in center. Bake 10 minutes longer. Loosen cookies from pan while still warm. Place a whole glace cherry in center of each.

1 C. of all-purpose flour or self-rising flour (if you use self rising flour eliminate the salt)
1/2 tsp. baking soda
1/2 tsp. salt
1/4 C. margarine or butter
1/4 C. shortening
3/8 C. granulated sugar
1/4 C. brown sugar
1 egg
1 tsp. vanilla
1/2 C. finely chopped walnuts, almonds or pecans
1/2 C. finely chopped dried apricots
2 Tbs. apple cider vinegar
1/4 C. coconut flakes
