Ginger Cream Cookies Recipe

Molasses, cinnamon and nutmeg give this creamy cookie and extra spice.

Ingredients

5 1/2 C. Flour
1 C. Sugar
1 C. Real Butter
3 Eggs
1 Tbs. Soda
1 C. Molasses
3 Tsp. Cinnamon
1 1/2 tsp. Cloves
1 tsp. Nutmeg
1 C. Sour Cream

Icing:
Powdered Sugar
Milk

Directions

Mix all ingredients and let set over night. Roll into a soft dough. Roll out and make cookies. Set oven at 375 degrees and bake for 8-10 minutes.

Icing: Mix together ingredients to make icing, not runny.

Ginger Shortbread Cookies Recipe

Ingredients

1/2 C. confectioners’ sugar
2 C. all-purpose flour
1 tsp. ground ginger
1 C. cold butter, sliced
1/2 C. chopped candied ginger

Directions

Combine the sugar, flour and ground ginger. Cut in butter with a pastry blender or fork. Finish mixing with your hands to make sure all the butter is worked in. When mixture holds together work in the candied ginger. Press the shortbread into an ungreased 9-inch square pan, about 1/2-inch thick. Prick through to bottom of the dough with a fork. Bake at 300 degrees for 50-60 minutes. While warm, cut into desired shapes with a sharp serrated knife.

Ingredients

1 C. persimmon pulp
1 C. nuts
1 C. raisins
1 C. sugar
1/2 C. shortening
1 tsp. soda, dissolved in pulp
1/4 C. flour
1/2 tsp. cinnamon
1/2 tsp. ground cloves
1/2 tsp. nutmeg
1 egg

Directions

Cream shortening and sugar. Add egg, soda and persimmon pulp. Add dry ingredients, nuts and raisins. Drop with teaspoon on greased cookie sheet. Bake for 10 minutes in 350-375 degrees oven.

Yield: 90 cookies

Boston Cream Cookies Recipes

In our hometown bakery, they made the best frosted molasses soft cookies. I loved them! Well, I wanted to try to make some of my own. A relative brought these to a family gathering. These cookies are so similar to the bakery cookies. I asked her for the recipe.

1/2 C. molasses
1 egg
1/4 C. buttermilk
1/4 tsp. salt

Easy Gingerbread Cookies Recipe

Ingredients

1 5.9 oz. pkg. butterscotch pudding mix
3/4 C. butter
3/4 C. firmly packed brown sugar
1 egg
2 1/4 C. all-purpose flour
1 tsp. baking soda
1 Tbs. ground ginger
1 1/2 tsp. ground cinnamon

Directions

Cream pudding mix with butter and sugar; add egg, and blend well. Combine flour, baking soda, ginger, and cinnamon; blend into pudding mixture. Chill dough for 1 hour or until firm. Roll dough on a floured board to about 1/4 inch thickness and cut with cookie cutter. Place on greased baking sheets; use a straw to make a hole in the top of the cookie for hanging on the tree, if desired. Bake at 350 degrees for 10-12 minutes. Remove from oven and cool on wire rack. Decorate if desired.

Reindeer Ginger Pops Recipe

These cute ginger cookies are fun to make and are delightful party favors for a child’s holiday or birthday party.

Ingredients

1 package Betty Crocker® gingerbread cake and cookie mix
1/3 C. lukewarm water
28 small pretzel twists
28 wooden sticks with rounded ends
1 oz. semisweet baking chocolate
1/2 tsp. shortening
56 white oval-shaped licorice candies
28 red cinnamon candies

Directions

Mix gingerbread mix (dry) and lukewarm water until dough forms. Cover and refrigerate about 15 minutes or until dough is easy to handle. Wrap dough in plastic wrap, leaving ends open. Roll dough into log about 7 inches long. Pinch along top of log and plastic to form one corner of triangle. Roll log over; pinch again to form second corner. Roll log over; pinch again to form third corner. Straighten sides of log to form a triangular-shaped log. Close ends of plastic wrap; refrigerate at least 2 hours.

Ginger Snaps Recipe

This is a yummy recipe handed down by my maternal grandmother. She was an excellent grandmother in that she did not just make them for the holidays!

Ingredients

2 C. plain flour
2 tsp. soda
1 tsp. cinnamon
3/4 C. Crisco or substitute
l egg
1 Tbs. ginger
1/2 tsp. salt
1 C. sugar
1/4 C. molasses

Directions

Cream sugar and Crisco. Add molasses and egg; beat in dry ingredients. Roll into small 1-inch balls, dip in sugar and place on ungreased cookie sheet. Bake at 375 degrees until tops are cracked and lightly browned. *Do not press down with a glass!
