Under Distinctly Christmas Cookies+ Nutty Cookies
So many delicious flavors, it’s a great cookie for the fall season when pumpkins are abundant!

Ingredients
2 C. flour
2 tsp. cinnamon
1 tsp. ground cardamom
1 tsp. baking soda
1 C. butter, softened
1/2 C. sugar
1/2 C. packed brown sugar
1 C. solid pack pumpkin
1 egg
2 tsp. vanilla
2 C. white chocolate chips
2/3 C. coarsely chopped macadamia nuts, toasted
Directions
Combine first 4 ingredients in a small bowl. Beat butter and sugars in a large bowl until creamy. Beat in pumpkin, egg and vanilla until well mixed; gradually beat in flour mixture. Stir in chips and nuts. Drop by rounded Tbs. onto greased baking sheet; flatten slightly with back of spoon or greased bottom of glass dipped in sugar. Bake in preheated oven at 350 degrees for 11-14 minutes. Cool for 2 minutes, remove to wire rack to cool completely.

Under Nutty Cookies

Ingredients
2/3 C. macadamia nuts
1 1/4 C. all-purpose flour
1/2 C. butter, softened
1/2 C. sugar
1 egg
1/2 C. coconut flakes
1/4 tsp. almond extract
1/2 tsp. vanilla
Directions
Preheat the oven to 350 degrees Put all of the ingredients in a food processor and process until smooth. Shape dough into 1-inch balls and place on ungreased baking sheet. Bake for 12-15 minutes, or until golden brown.

1 egg
15 oz. 100% pure pumpkin
2 1/2 C. flour
2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
1 tsp. nutmeg
1 C. white chocolate morsels
1/2 C. chopped macadamia nuts
Directions
Preheat oven to 350 degrees. Grease cookie sheets. Cream butter and sugar. Beat in vanilla, egg and pumpkin. Stir together flour, baking powder, baking soda, salt, cinnamon and macadamia nuts. Drop by rounded tsp. onto cookie sheets. Bake for 12 minutes.

Ingredients
1/3 C. butter
1/3 C. brown sugar, packed
1/4 C. raspberry jam
1/3 C. granulated sugar
1 egg
1 tsp. vanilla extract
1 1/2 C. flour
1 tsp. baking soda
8 oz. white chocolate chips or chopped white chocolate
1 C. macadamia nuts, chopped
Directions
Cream butter and sugars. Add egg and beat in. Add vanilla extract and raspberry jam. Mix well. Mix together flour and baking soda. Gradually add flour mixture to batter. Stir in nuts and chips. Drop by rounded teaspoonful onto lightly greased cookie sheets, about 2 inches apart. Bake at 350 degrees for 8-10 minutes. Don’t overbake. Cool on racks.
