Under Distinctly Christmas Cookies+ Nutty Cookies+ raisin
These cookies are a great way to use up any extra zucchini!

Ingredients
3/4 C. shortening
1 C. firmly packed brown sugar
1 lg. egg
1/2 C. grated zucchini - unpeeled
2 1/4 C. flour
1/2 tsp. baking soda
1/2 tsp. salt
3/4 tsp. ground cinnamon
1/4 tsp. ground cloves
1/4 C. raisins
1/4 C. nuts
Directions
In a large bowl, thoroughly mix all ingredients. Place rounded teaspoon of batter on greased cookie sheet. Bake at 375 degrees for 12-15 minutes, or until edges become golden brown.

Ingredients
1 C. brown sugar, packed
1 C. chopped nutmeats
2 large egg whites, room temperature
2 large egg yolks, room temperature
6 Tbs. flour
Pinch of salt
Directions
Beat yolks of eggs until thick and lemon-colored, add sugar gradually, nut meats, whites of egg beaten until stiff, and flour mixed with salt. Drop from tip of spoon on buttered sheet, spread, and bake in a moderate oven (250-300°F) until golden brown.

Under Chocolate Cookies+ Distinctly Christmas Cookies
These oatmeal chocolate chunk cookies are soft and very delicious!

Ingredients
1 C. butter
3/4 C. brown sugar
3/4 C. sugar
2 eggs
2 tsp. vanilla
2 1/2 C. flour
1 tsp. cinnamon (optional)
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
2 1/2 C. oats
1 11.5-oz. bag semi-sweet chocolate chunks
1 C. chopped pecans, or any nut of your choice
Directions
Preheat oven to 350 degrees. In a large mixing bowl, cream butter, brown sugar, and sugar. Add eggs and vanilla and mix well. Combine flour, cinnamon (if using), baking powder, baking soda and salt and stir into creamed mixture. Add oatmeal, chocolate chunks and pecans and stir until well blended. Drop by teaspoonful onto cookie sheets. Bake for 12 minutes.

These cookies are very moist and sweet – great if you like your cookies chewy.

Ingredients
1 C. butter, softened
2/3 C. packed brown sugar
1 egg
2 C. all-purpose flour
1/2 tsp. salt
1 1/2 C. pecan halves
Directions
In a large bowl, cream butter, brown sugar and egg. Mix until well blended. Slowly add flour and salt and mix well. Cover and refrigerate for at least one hour. Preheat oven to 375 degrees. Roll one inch pieces of dough into balls and place 2 inches apart on cookie sheets. Flatten balls with the bottom of a glass dipped in flour. Press a pecan into top of dough. Bake 10-12 minutes until lightly colored.

Ingredients
1 tsp. baking soda
1 C. persimmon pulp
1 C. butter
1 C. granulated sugar
1 egg
2 C. all purpose flour
1/2 tsp. cloves
1/2 tsp. allspice
1/2 tsp. cinnamon
1 C. chopped nuts
1 C. raisins
Directions
Add soda to persimmon pulp and set aside. Cream butter and sugar together. Beat egg and add to pulp. Mix dry ingredients together; add raisins and nuts. Add egg mixture to butter and sugar; mix well. Add dry ingredients and blend. Drop by teaspoonful on greased cookie sheet. Bake for 12-15 minutes at 350 degrees.

Under Chocolate Cookies
I have to share this unique way of making chocolate cookies. Instead of baking them in an oven I make them using a saucepan. These cookies are delicious and make with cocoa, peanut butter and if you want you can add coconut or pecans.

Ingredients
2 C. sugar
1/2 C. milk
1/2 C. cocoa
1 stick (1/2 C.) butter
1/2 C. peanut butter
1 tsp. vanilla
3 C. oatmeal
1/2 C. coconut or pecans (optional)
Directions
Combine sugar, milk, cocoa, and butter in a saucepan. Bring to a boil. Remove from heat. Add peanut butter and beat until smooth. Add vanilla, oatmeal and coconut or pecans, and mix well. Drop on waxed paper and let cool.

Ingredients
2 C. all purpose flour - sifted
2 C. walnuts - finely chopped
4 tsp. baking powder; sifted with the flour
1-C. egg substitute
1-C. sugar
2/3-C. brown sugar
1-Tbs. vanilla extract
Cinnamon and nutmeg to taste
3 Tbs. skim milk
Powdered sugar
Directions
Pre-heat oven to 375 degrees. Mix egg substitute, vanilla and sugars in a large bowl. In another bowl, sift the flour, baking powder, cinnamon and nutmeg. Add to the wet ingredients slowly. Stirring from the middle mix well, add a little milk if it gets too thick. Fold in the nuts. Drop teaspoonfuls onto no-stick cookie sheet and flatten out a little for larger cookies, leave rounded for nut shaped cookies. Put in the oven for 10 to 12 minutes until lightly browned. Watch them carefully so the bottoms do not burn. Sprinkle with powdered sugar if desired and allow cooling.

These Italian cookies are great for a snack or breakfast with coffee. This recipe goes back to my mother’s mother. She gave them to us as kids before school and after.

Ingredients
1 C. nuts
1/2 C. margarine
1/4 C. honey
2 eggs
1 1/2 C. flour
2 tsp. baking powder
Directions
Heat oven to 350 degrees. Grind nuts. Beat margarine, honey and eggs together with mixer at medium speed. In a separate bowl, mix together flour, ground nuts and baking powder. Gradually add flour mixture to the creamed mixture. Beat at a slow speed until blended. Dough will be soft. Divide in half. On an oiled baking sheet, make 2 logs about 2-3 inches wide and about 12 inches long.

I make these every year for Christmas. They are light, fluffy and easy to make!

Ingredients
1 C. butter
1/2 C. sugar
1 C. flour (sifted)
1 1/2 C. oatmeal
1/2 tsp. vanilla
Optional: mix in 1/2 C. nuts or raisins
Directions
Cream butter and sugar, until smooth. Add remaining ingredients. Chill. Shape into balls, flatten with bottom of glass dipped in sugar. Bake for 8-10 minutes in a 350-degree oven. Let cool. Sprinkle with lots of powdered sugar.
