Christmas Fruit Drops Recipe

These fruity Christmas cookies are different than what Santa is used to, but I bet he’ll love them all the same.

Ingredients

* 1 1/2 C. sifted flour
* 1/2 tsp. soda
* 1 tsp. salt
* 1/2 C. shortening
* 3/4 C. sugar
* 1 egg
* 1/2 tsp. vanilla extract
* 1 C. candied fruit, finely chopped

Directions

Preheat oven to 375 degrees. Sift together flour, soda and salt. Cream together shortening and sugar until light and fluffy. Add egg and vanilla extract. Beat well. Blend candied fruit with flour mixture and add to creamed mixture. Mix well. Drop by teaspoonfuls on ungreased baking sheet. Bake in oven for 10 minutes.

Coconut Macaroons Recipe

This macaroon recipe only contains three ingredients. If this isn’t baking on a budget, then I don’t know what is.

Ingredients

* 2 C. coconut, shredded
* 1/2 C. sweetened, condensed milk
* 1 tsp. vanilla extract

Directions

Preheat oven to 350 degrees. Combine coconut and milk. Add vanilla and mix well. Drop from teaspoon, 1 inch apart, onto greased cookie sheet. Bake in oven for 10 minutes or until delicately browned. Remove from sheet at once.

Swedish Sprits Recipe

Not many people have tried a Swedish dessert. Maybe they think they’d be difficult. This one is easy!

Ingredients

* 1 1/2 C. butter
* 1 C. sugar
* 1 egg, well-beaten
* 2 tsp. vanilla extract
* 4 C. flour
* 1 tsp. baking powder

Directions

Preheat oven to 400 degrees. Thoroughly cream butter and sugar. Add egg and vanilla. Beat well. Add sifted, dry ingredients. Mix to smooth dough. Force through cookie press, forming various shapes. Decorate with candied fruits or colored sugar. Bake in oven until light brown, about 8-10 minutes.

Cream Cheese Cookies Recipe

If you have some extra cream cheese, try making these cookies. They only require a few ingredients, and you probably have them all! Just don’t forget the shortening.

Ingredients

* 1/2 C. shortening
* 1/2 C. sugar
* 4-oz. pkg. cream cheese
* 1 egg, well-beaten
* 2 C. flour
* 1/4 tsp. salt
* 1 tsp. baking powder

Directions

Preheat oven to 350 degrees. Thoroughly cream shortening and sugar. Add softened cheese and half the egg. Mix well. Add sifted, dry ingredients. Shape in rolls. Wrap in waxed paper. Chill thoroughly. Slice thin and place on greased cookie sheet. Brush with remaining egg and allow to dry. Bake in oven for 10 minutes.

Forgotten Cookies Recipe

This is such a quick and easy recipe. You won’t even have to watch the oven to see if they’re done.

Ingredients

* 3 egg whites, beaten stiff
* 2/3 C. sugar
* 6 oz. semi-sweet chocolate morsels
* 1 C. pecans or walnuts

Directions

Preheat oven to 350 degrees. Beat egg whites stiff. Add sugar and continue beating. Fold the nuts and chocolate pieces in. Drop with a spoon onto a cookie sheet sprayed with a no-stick cooking spray.

Cut off oven as you put the cookies in. In a gas oven, with pilot light burning, leave in for 2-3 hours. In an electric oven, leave in over night. Do not open the door of the oven, until the cookies are finished.
