Jumbo Raisin Cookies Recipe

Spiced with nutmeg, allspice and cinnamon, these chewy cookies are sweetened with lots of raisins!

Ingredients

2 C. raisins
1 C. boiling water
1 tsp. baking soda
2 C. granulated sugar
1 C. shortening
3 eggs
1 tsp. baking powder
1 tsp. salt
1 1/2 tsp. cinnamon
1/4 tsp. nutmeg
1/4 tsp. allspice
1 tsp. vanilla extract
4 C. all purpose flour

Directions

Boil raisins in boiling water for 5 minutes. Cool and add soda. Cream sugar, shortening, eggs, salt and spices. Blend in raisin mixture and add vanilla. Sift flour with baking powder and add to mixture; blend well. Drop by heaping tablespoonful onto baking sheet and bake at 375 degrees for 12-15 minutes.

Frost Bite Cookies Recipe

Lovely, sweet cookies with a great texture and a chocolate-dipped look that’ll tempt anybody!

Ingredients

3/4 C. raisins
3 Tbs. orange juice or orange-flavored liqueur
1/2 C. (1/4 lb.) butter or margarine, room temperature
3/4 C. sugar
1 large egg
2 tsp. finely grated orange peel
1 C. all-purpose flour
1 tsp. baking soda
1 1/2 C. rolled oats
8 oz. white chocolate baking chips
1 tsp. vegetable oil

Directions

Preheat oven to 350 degrees. In a small bowl, combine orange juice and raisins. Cover and microwave on high for 1 minute. Let cool, covered. In a large bowl, beat butter and sugar until fluffy. Beat in egg and orange peel. In a separate bowl, combine flour and baking soda. Stir into butter mixture. Add raisins, any soaking liquid and oats, mix well.

Date-Nut Pinwheel Cookies Recipe

These cookies spell “Christmas” to my family. If no others, this one gets made! New to the site, looking forward to trying some new cookie recipes.

Ingredients

1 C. white sugar
1 C. brown sugar
1 C. Crisco
1 tsp. vanilla
3 eggs
4 C. flour
1 tsp. baking soda

Filling:
1 lb. raisins
1 lb. dates
1/2 C. sugar
1/2 C. water
2/3 C. chopped English walnuts

Directions

Grind dates and raisins together, add sugar and water and cook in saucepan until sugar is dissolved and mixture is smooth. Cool then add the nutmeats.

Mary’s Oatmeal Raisin Cookies Recipe

These oatmeal raisin cookies came from my mother in law. They are soft, slightly sweet drop cookies.

Ingredients

3/4 C. shortening
1 C. sugar
1/2 tsp. cinnamon
1/2 tsp. cloves
1/2 tsp. salt
1/2 tsp baking powder
1 tsp. vanilla extract
2 lg. eggs
4 Tbs. milk
1 C. raisins (plumped)
2 C. all purpose flour
2 C. quick cooking oats

Directions

Cream shortening and sugar. Add cinnamon, cloves, salt, baking powder and vanilla. Mix well. Add eggs and milk and mix well. Add raisins(drained from plumping in boiling water). Add flour and mix. Add oatmeal and mix. Use two teaspoons to drop by rounded spoonfuls onto ungreased baking sheets covered in foil. Place about one inch apart. Bake in a 350-degree oven for 12-14 minutes. Edges should be slightly brown. Let sit for 2 minutes and move to a plate to cool. Makes approximately 4 dozen cookies.

Cinnamon-Spice Oatmeal Raisin Cookies Recipe

Give me a handful of good oatmeal cookies any day. I like to use quick-cooking oats for the recipe that follows; but you could substitute old-fashioned rolled oats if you’d prefer coarser, chewier cookies. Of course, my recipe includes just about everything I like to add to a bowl of oatmeal in the morning: butter, sweet spices, brown sugar, raisins and walnuts. If you like, try replacing the raisins with dried cranberries or dried cherries. In fact, you might want to hide this article from the children, or they’ll demand cookies for breakfast!
