Ingredients
1 C. shortening
2 C. sugar
2 whole eggs, beaten
2 tsp. baking soda
4 tsp. baking powder
1 tsp. salt
1 tsp. cinnamon
1 tsp. nutmeg
1/3 tsp. ground cloves
2 C. persimmon pulp
1 tsp. lemon juice
1 tsp. vanilla
4 C. flour, divided
2 C. chopped nuts
1 C. mixed candied fruit
1 C. shredded coconut
Directions
Preheat oven to 375 degrees. Lightly grease baking sheet. Cream shortening and sugar until light and fluffy. Add eggs, blending thoroughly. Add baking soda, baking powder, salt, cinnamon, nutmeg, cloves, persimmon pulp, lemon juice and vanilla.

Under Distinctly Christmas Cookies+ Fruity Cookies
Cherries, coconut, peanuts and marshmallows melt together for this festive dish that’s great for Christmas or Valentine’s Day!

Ingredients
1 1/2 C. corn flake crumbs
1/2 C. margarine; softened
4 Tbs. sugar
1 1/3 C. flaked coconut
3/4 C. maraschino cherries, chopped
1 can Eagle Brand Condensed milk
1 C. pecans, chopped
2 C. miniature marshmallows
Directions
In 13×9x2 inch baking pan, combine cornflake crumbs, butter and sugar. Press down firmly with back of spoon. Sprinkle coconut, marshmallows, pecans and cherries evenly over crumb crust. Pour sweetened condensed milk over all evenly. Bake at 350 degrees for about 25 minutes. Cool completely before cutting into squares. Store in tin box between layers of wax paper.

Ingredients
Crust and topping:
1 C. shortening
1/2 tsp. salt
3 C. uncooked oats
2-1/2 C. flour
1/2 C. brown sugar
Filling:
2 packages (8 oz.) dates, chopped
1 C. boiling water
Directions
Preheat oven to 350 degrees. Mix together shortening, salt, oats, flour and brown sugar. Save 1/3 of the mixture for the topping and press remaining mixture into bottom of lightly greased 9 x 13 pan. Cook dates
and water until thick (if too thick, add a little more water). Cool. Spread on top of crust. Sprinkle with remaining 1/3 reserved oat mixture on top. Bake 20 to 30 minutes (they are more chewy at 30 minutes).

Under Chocolate Cookies
Chocolate cake mix and chocolate chips make a very chocolaty cookie.

Ingredients
1 pkg. chocolate cake mix (2 layer)
1/3 C. vegetable oil
1 egg
1 C. chopped nuts
1 C. semi-sweet chocolate chips
1 14 oz. can sweetened condensed milk
1 tsp. vanilla extract
Dash salt
Directions
Preheat oven to 350 degrees. With mixer on medium speed, beat cake mix, oil and egg in large bowl until crumbly. Stir in nuts. Set aside 1 c. of crumb mixture. Firmly press remaining mixture on bottom of a greased 9×13 baking pan. In small sauce pan, melt chips with condensed milk, vanilla and salt. Pour evenly over prepared crust. Sprinkle with reserved crumb mixture evenly over top. Bake at 25-30 minutes or until edges are firm. Cool; cut into bars. Drizzle with tube decorating icing if desired. Store loosely covered at room temperature.

Ingredients
2 1/3 C. all-purpose flour
1 C. granulated sugar
1 1/2 tsp. baking powder
1 1/4 tsp. cinnamon
1/2 tsp. nutmeg
2 large eggs
2 large egg whites
1 Tbs. vanilla extract
1 1/2 C. fresh or frozen cranberries, chopped
3/4 C. sliced almonds
Directions
Preheat oven to 325 degrees. Combine the flour, sugar, baking powder, cinnamon and nutmeg in a large mixing bowl. Whisk the eggs, egg whites and vanilla together and add to the dry ingredients, mixing until just moistened. Add cranberries and almonds and mix thoroughly. Turn out onto a floured surface and divide batter in half. Pat each half into a log about 14 inches long and 2 inches wide.

Under Spice and Gingerbread Cookies
Dark, soft and delicious! I remember my mom going North to bring grandma back to our house just to make a lot of these cookies. Watching grandma make them, I always wondered how she knew when to stop putting in the flour, she NEVER measured anything when she made these cookies. I was always in awe of her ! I can’t believe I have never seen this recipe anywhere. It’s really good. Every bite reminds me of her. I hope you enjoy it as much as we do.

Ingredients
1/2 C. butter
1 1/2 C. chopped dates
1/3 C. chopped maraschino cherries
3/4 C. sugar
3 C. Rice Krispies
1 C. chopped pecans
Directions
Put butter, dates, cherries and sugar into a medium saucepan. Cook over medium heat, stirring constantly until mixture becomes a soft paste. Remove from heat. Add cereal and pecans. Mix well. Use a level Tbs. and make balls. Place on waxed paper to cool.
