Under Chocolate Cookies+ Distinctly Christmas Cookies
Use your waffle iron to bake these chocolatey cookies.

Ingredients
2 squares baking chocolate
1/2 C. butter or oleo
2 eggs, beaten
3/4 C. sugar
1 C. flour
1 tsp. vanilla
Directions
Melt chocolate and butter. Set aside. Mix eggs, sugar, flour and vanilla together; add chocolate mixture. Drop by tsp. on hot waffle iron and bake 1 minute. (1 tsp. of dough per section of waffle iron) Frost with vanilla or chocolate glaze when cool.

Ingredients
1 1/4 C. flour
1/2 tsp. baking soda
1/2 tsp. salt (unless using lightly salted butter)
1/3 C. milk
1 Tbs. lemon juice
1/2 tsp. vanilla
1/3 C. butter, softened
1/2 C. sugar
1 egg
Icing:
1 1/2 C. icing sugar (aka: confectioners or powdered sugar)
1 Tbs. corn syrup
2 tsp. fresh lemon juice
1/4 tsp. vanilla
2-3 Tbs. water, adjust for desired consistency
2 Tbs. cocoa powder
Directions
Preheat oven to 350 degrees. Sift together flour, baking soda and salt. In a measuring cup, mix together milk, lemon juice and vanilla, let thicken. You can replace this with buttermilk if you like.

1 C. sour milk (1 C. milk and 1 Tbs. vinegar or lemon juice) or 1 C. buttermilk

This recipe is my favorite cookie at Christmastime. Wherever I take them I’m asked for the recipe. The combination of cranberries, white chocolate chips and the grated orange peel gives these cookies a taste all their own. You MUST try these.

Ingredients
1 box Ritz crackers
1 pkg. almond bark
1 jar creamy peanut butter
Directions
Melt almond bark in double boiler or in the microwave. In the meantime make “sandwiches” with two crackers and a dab of peanut butter. When almond bark is melted remove from heat. Using tongs to dunk each cracker sandwich in the almond bark to coat completely. Lay on wax paper to set.

This is a soft cookie with a deep brown sugar flavor.

Ingredients
2 C. brown sugar
1 C. butter
3 eggs, beaten
1 tsp. baking soda
2 Tbs. hot water
4 C. flour
1 heaping tsp. baking powder
1 tsp. salt
1 tsp. vanilla
Directions
Preheat oven to 350 degrees. Cream sugar and butter; add eggs. Mix soda and hot water, add to mixture, and mix well. Mix flour, baking powder, salt, and add to mixture one cup at a time. Add vanilla. Chill batter thoroughly. This is very soft dough, but it can be handled nicely if chilled. Roll and cut. Bake about 10 minutes, but do not over bake. Makes a soft cookie.

Ingredients
1 Package Of Oreo Cookies (plain)
12 Peppermint Discs
1 8 Oz. Package Of Cream Cheese
1 Package Of Chocolate Almond Bark
Sprinkles For Decoration
Directions
Grind Oreo cookies and peppermint discs in the food processor. Divide cream cheese into thirds and add to food processor in thirds to insure that all the ingredients are mixed well. Shape mixture into balls using an ice cream scoop or melon baller for smaller treats. Lay Oreo balls on wax papper on a cookie sheet and freeze for an hour. Remove from freezer. Melt almond bark and dip the balls in in the melted almond bark using a bamboo skewer. Lay on wax papper to harden. Sprinkle with chocolate or rainbow sprinkles.

Ingredients
1 C. margarine
1 C. vegetable oil
1 C. confectioners’ sugar
1 tsp. vanilla extract
2 eggs
4 1/2 C. all purpose flour
1 tsp. salt
1 tsp. baking soda
1 tsp. cream of tartar
Directions
Cream together butter, oil, sugars and vanilla. Add eggs; beat until fluffy. Sift flour, salt, soda and cream of tartar together and add to creamed mixture. Beat until smooth. Make into balls and roll in plain or colored sugar. Place on un-greased cookie sheet and press with a glass dipped in sugar. Bake at 350 degrees for 12 minutes.

This is an age-old recipe that’s a simple butter cookie with a sweet touch of rose jelly. Very pretty and easy to make.

Ingredients
1/2 C. softened butter or margarine
1/4 C. packed light brown sugar
1 egg, separated
1/2 tsp. vanilla extract
1/2 tsp. rosewater
2 C. flour
1/2 tsp. salt
Finely chopped nuts
Rose petal jam or rosehip jelly
Powdered sugar or shredded rose petals for decoration
Directions
Preheat the oven to 300 degrees. Grease the cookie sheets. Cream the butter, sugar and egg yolk. Add vanilla, rosewater and salt, mixing well. Slowly add the flour. Mix very well. Shape the dough into balls. Whisk the egg white to break it down. Roll the dough balls in the egg white, then in the nuts. Place on the cookie sheet about 2 inches apart. Bake for only 5 minutes.
