Under Chocolate Cookies+ General+ Nutty Cookies
These crunchy toffee cookies don’t contain egg! Just a whole bunch of other yummy ingredients!

Ingredients
* 15 graham crackers
* 1/2 C. almond slices or chopped nuts
* 3/4 C. butter or margarine
* 3/4 C. packed brown sugar
* 1/4 tsp. almond extract
* 1 C. chocolate chips
Directions
Arrange crackers in bottom of well-buttered 9×13-inch pan. Sprinkle with nuts. Combine butter and brown sugar in saucepan. Boil hard for 3 minutes. Stir in extract. Pour carefully over crackers. Bake at 375 degrees for 10 minutes or until bubbly all over. Sprinkle with chips. When soft, spread to frost. Cut into small squares while warm or refrigerate and break into pieces when hard.

Under Candy Cookies+ Chocolate Cookies+ Distinctly Christmas Cookies+ Fruity Cookies
There’s a whole lot going on in these cookies, but all the flavors compliment each other perfectly!

Ingredients
1 1/2 C. flour
1 tsp. baking soda
1 C. butter
1 egg
3/4 C. sugar
3/4 C. brown sugar
1 tsp. vanilla
1 C. dried cherries, snipped if needed
1 C. good quality dark chocolate, chopped
1 C. toffee bits
1 1/2 C. quick-cook oatmeal
Directions
Preheat oven to 350 degrees. Cream butter and both types of sugar until nicely blended. Add egg and vanilla, beat lightly until smooth. Stir in flour and baking soda (if you used unsalted butter, add just a wee dash of salt to the batter at this point) and mix well. Stir in oatmeal, dried cherries, chocolate, and toffee bits. Shape into 2 logs. You can bake these immediately or chill. Slice into 1/2-3/4 inch slices and place on greased cookie sheet. Bake at 350 degrees for 8-10 minutes. Cool, remove to rack.
